SHRIMP AND WILD RICE CASSEROLE

Shrimp and Wild Rice Casserole image

One of my favorite casseroles! A little rich but a lot tasty! Though we like "cheesy", we cut back some on the cheese. If I double the recipe, I then use a 9x13 pan...again, cutting back on the cheese! (from a Paula Deen recipe)

Provided by Cherie Hammond

Categories     Seafood

Number Of Ingredients 8

1 box wild rice - 8 ounces
1 lb medium shrimp, peeled and deveined
2 Tbsp butter
1/2 green pepper, seeded and chopped
1/2 onion, chopped
1 can(s) cream of mushroom soup
2 c grated sharp cheddar cheese
salt and pepper

Steps:

  • 1. Cook the rice according to the package directions, minus 1/4 cup water. Drain and let it cool slightly.
  • 2. Then bring 2 cups water and 1/2 tablespoon salt to a boil in a saucepan and cook the shrimp for 1 minute. Drain immediately and set aside.
  • 3. Heat the butter in another saucepan and saute the green pepper and onion until soft, about 5 minutes.
  • 4. Preheat oven to 325 degrees. In a large bowl, combine the cooled rice, soup, 1 1/2 cups (or less!) cups of cheese, shrimp and sauted vegetables. Add salt and pepper to taste and mix well.
  • 5. Spray a 7x11 glass casserole (or 9x13 if doubling recipe) with vegetable spray. Put the mixture in the dish and top with the remaining 1/2 cup cheese. Bake for 30 minutes, until bubbly.

Tips:

  • Mise en place: Before you start cooking, make sure you have all the ingredients and tools you need. This will help you stay organized and avoid scrambling during the cooking process.
  • Use fresh, high-quality ingredients: The better the ingredients, the better the soup will taste. If you can, use organic or locally sourced ingredients.
  • Don't overcrowd the pan: When you're sautéing the shrimp, don't overcrowd the pan. This will prevent the shrimp from cooking evenly.
  • Cook the shrimp until they're opaque: Shrimp should be cooked until they're opaque and pink. Overcooked shrimp will be tough and rubbery.
  • Use a good quality brandy: The brandy is a key ingredient in this soup, so it's important to use a good quality one. Look for a brandy that's at least 80 proof.
  • Don't boil the soup: Bring the soup to a simmer and then reduce the heat to low. Boiling the soup will make the shrimp tough.
  • Serve the soup immediately: This soup is best served immediately after it's made. The rice will continue to absorb the liquid, so the soup will thicken as it sits.

Conclusion:

Brandied shrimp and wild rice soup is a delicious and easy-to-make soup that's perfect for a winter meal. The combination of brandy, shrimp, and wild rice creates a flavorful and satisfying soup that's sure to please everyone at the table. So next time you're looking for a quick and easy soup recipe, give this one a try. You won't be disappointed!
