Tips:

  • Choose fresh, succulent shrimp: Opt for wild-caught or sustainably farmed shrimp whenever possible. Look for shrimp with a firm texture and a slightly briny smell.
  • Use quality brandy: The brandy used in the recipe should be of good quality. A good cognac or armagnac will work well.
  • Don't overcrowd the pan: When searing the shrimp, make sure not to overcrowd the pan. This will prevent the shrimp from cooking evenly and will result in steamed shrimp rather than seared shrimp.
  • Cook the shrimp until they are just opaque: Overcooking the shrimp will make them tough and rubbery. Cook them just until they are opaque and pink, about 2-3 minutes per side.
  • Use a splash of lemon juice: A squeeze of lemon juice adds a bright, acidic flavor to the dish that balances out the richness of the butter and brandy.

Conclusion:

Brandied shrimp is a classic dish that is perfect for any occasion. It is easy to make and can be served as an appetizer or a main course. The combination of juicy shrimp, rich butter, and flavorful brandy creates a dish that is sure to please everyone.
