Time 31m

Number Of Ingredients 10

2 cups Raisin Bran
1 cup milk
1 large egg ((beaten, at room temperature) )
1/4 cup unsalted butter ((melted and cooled - or use cooking oil))
1 cup all-purpose flour
2 1/2 tsp baking powder
1/4 cup sugar
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp ground cinnamon ((optional))

Steps:

  • Preheat your oven to 350 degrees F (175 degrees C) and line a muffin tin with paper muffin liners or coat with non-stick cooking spray.
  • In a large mixing bowl, combine the dry ingredients including all-purpose flour, baking powder, salt, sugar, and cinnamon.
  • Make a well in the center of the dry ingredients and add the cooled, melted butter, milk, egg, and vanilla extract.
  • Mix the ingredients just enough to incorporate the dry flour into the wet ingredients.
  • Add the raisin bran cereal, stir to combine. Allow the muffin batter to sit for up to 45 minutes if you want the bran flakes to take on the moisture from the batter. *These muffins are the only time I will ever argue that soggy cereal is best!
  • Portion the muffin batter out into your prepared muffin tin, filling each muffin liner between 3/4 and full. Bake at 350 degrees F (175 degrees C) for 16-18 minutes, or until an inserted toothpick comes out clean.
  • Remove the baked muffins and allow to cool in the muffin pan for 10 minutes. Serve warm for best results.

BRAN RAISIN MUFFINS

Bran Raisin Muffins image

Provided by Judith Cadigan

Yield Makes about 60 muffins

Number Of Ingredients 16

3 cups all-purpose flour
2 cups whole-wheat flour
1 tablespoon plus 2 teaspoons baking soda
2 teaspoons salt
2 cups quick-cooking oats
2 cups All-Bran or other 100% bran cereal
1 cup raisin bran cereal
1 cup Grape-Nuts cereal
1 cup raisins
2 sticks (1 cup) unsalted butter, melted and cooled
1 qt well-shaken buttermilk
2 cups granulated sugar
1/2 cup packed brown sugar
4 large eggs
Special Equipment
a muffin pan with 1/2-cup muffin cups

Steps:

  • Preheat oven to 350°F. Generously butter muffin cups.
  • Whisk together flours, baking soda, and salt in a large bowl, then stir in oats, cereals, and raisins. Whisk together butter, buttermilk, sugars, and eggs in another bowl, then add to cereal mixture and stir until just combined. (Batter will be very thick.)
  • Spoon 1/3 cup batter into each muffin cup and bake in middle of oven until golden and a tester comes out clean, 17 to 20 minutes. Remove muffins from pan and cool on a rack.

Tips:

  • Muffin Tins: Use a good quality muffin tin to ensure even baking and easy release of the muffins. If you don't have a muffin tin, you can also use paper muffin cups placed on a baking sheet.
  • Measuring: Be precise when measuring your ingredients. Using the correct measurements will ensure the muffins turn out as expected.
  • Mixing: Do not overmix the batter. Overmixing can result in tough, dense muffins. Mix just until the ingredients are combined.
  • Baking: Bake the muffins in a preheated oven. This will help them rise evenly and prevent them from sinking in the center.
  • Cooling: Allow the muffins to cool completely before storing them. This will help them set and maintain their shape.

Conclusion:

Bran raisin muffins, also known as St. John's jug muffins, are a delicious and nutritious breakfast treat. They are easy to make and can be enjoyed by people of all ages. These muffins are a good source of fiber, antioxidants, and essential vitamins and minerals. They are also a great way to use up leftover bran cereal.
