Steps:
- Wash the mushrooms and remove or trim any long stems if you want a "dressier" dish. Otherwise it's fine to leave them on. Pat the mushrooms dry with a paper towel.
- Saute mushrooms in butter and olive oil at medium high heat until mushrooms are browned.
- Continue to cook at medium heat as the juices are released from the mushrooms. Simmer the mushrooms until the juices are reduced to almost dry.
- Add beef stock (and red wine if desired) and continue simmering until the stock has reduced to a sauce-like consistency.
Tips:
- Choose the right mushrooms: Use fresh straw mushrooms for the best flavor and texture. Look for mushrooms that are firm and have a light brown color.
- Soak the mushrooms: Soaking the mushrooms in hot water for 10 minutes helps to remove any dirt or debris and also helps to soften them.
- Use a good quality soy sauce: The type of soy sauce you use can make a big difference in the flavor of the dish. Use a dark soy sauce for a richer flavor.
- Do not overcook the mushrooms: Straw mushrooms cook quickly, so be careful not to overcook them. Overcooked mushrooms will become tough and chewy.
- Serve immediately: Braised straw mushrooms are best served immediately after they are cooked. They can be served as a side dish or as a main course with rice.
Conclusion:
Braised straw mushrooms in soy sauce is a delicious and easy-to-make dish that is perfect for a weeknight meal. The mushrooms are tender and flavorful, and the soy sauce adds a savory umami flavor. This dish is also a good source of protein and fiber. If you are looking for a new and exciting way to cook straw mushrooms, give this recipe a try.
