CHARRED CARROTS WITH ORANGE AND BALSAMIC
Ina Garten was one of the people who made roasted whole carrots fashionable for home cooks, back when "The Barefoot Contessa Cookbook" - her first - was published in 1999. Brightening up basic dishes with lemon, orange and vinegar became one of her signatures. She shared this recipe from her book "Modern Comfort Food" with The Times for Thanksgiving 2020.

- Cut the carrots crosswise into 4-inch lengths. Cut the larger pieces lengthwise in half or quarters so the sticks are roughly 1/2-inch wide.
- Place the carrots on a sheet pan and drizzle them with the olive oil. Sprinkle with the thyme, 1 1/2 teaspoons kosher salt and 1/2 teaspoon pepper. Toss with your hands until coated, then spread the carrots out in an even layer.
- Broil the carrots for about 10 minutes, tossing every few minutes, until they are tender and randomly charred. Top the carrots with the orange zest, orange juice and vinegar, sprinkle with some fleur de sel and toss to coat. Taste for seasonings, then serve warm or at room temperature.
BRAISED ONIONS A LA JULIA CHILD
These onions are included in the recipe for Boeuf Bourguignon, but they are so wonderful, that they deserve to be posted on their own. I think they are best with fresh pearl onions, but frozen are a fine substitute. You do need to use good stock though (Julia's beef stock is posted at #147999) Honestly, these are so delicious that I have a hard time not eating them before the meal is served. Prep time does NOT include peeling the onions (the hardest part of this).

Steps:
- If you are using fresh pearl onions, they are easier to peel if you blanch them in boiling water for 30 seconds and then run them under cold water to cool.
- If you are using frozen pearl onions, make sure they are defrosted and drained.
- Heat the butter and oil in a large skillet and add the onions to the skillet.
- Saute over medium heat for about ten minutes, rolling the onions about so they brown as evenly as possible without breaking apart.
- Pour in the stock, add the herbs, and cover.
- Simmer over low heat for about 40 to 50 minutes until the onions are perfectly tender but retain their shape and the liquid has mostly evaporated.
- Remove the herbs, season with salt and pepper to taste, and serve.

Tips:
- Choose the right onions: Yellow or white onions are best for braising, as they hold their shape well and have a mild flavor that will absorb the flavors of the other ingredients.
- Slice the onions thinly: This will help them cook evenly and quickly.
- Use a heavy-bottomed pot or Dutch oven: This will help to distribute the heat evenly and prevent the onions from burning.
- Cook the onions over low heat: This will allow them to caramelize slowly and develop a rich flavor.
- Add liquid to the pot: This will help to prevent the onions from sticking to the bottom of the pot and burning. Water, broth, or even orange juice can be used.
- Season the onions: Salt, pepper, and other herbs and spices can be added to taste.
- Cook the onions until they are tender: This may take 30 minutes or more, depending on the thickness of the onions.
Conclusion:
Braised onions with orange and balsamic vinegar is a delicious and versatile dish that can be served as a side dish, appetizer, or even a main course. The sweet and tangy flavors of the oranges and balsamic vinegar complement the caramelized onions perfectly, creating a dish that is both flavorful and elegant. This dish is also very easy to make. It can be done in one pot, which is a great option for busy weeknights. Keep these tips in mind as you will be making your next batch of braised onions with orange and balsamic vinegar!
