½ cup low-sodium vegetable or chicken broth

Steps:

  • Position rack in upper third of oven. Preheat to 450°F.
  • Toss onions, oil, butter, sage (or thyme), salt and pepper in a large bowl. Spread in a 9-by-13-inch metal baking pan (don't use glass or ceramic, which might shatter). Roast, turning once, until browned on both sides, 30 to 35 minutes total.

  • Peel the onions, and trim roots, leaving enough to keep onion intact. Cut them lengthwise in halves or quarters, depending on their size.
  • Place in a large skillet with butter, sugar, salt, pepper, and enough water to come halfway up sides of onions. Uncover, raise the heat to medium, and cook, stirring occasionally until caramelized, 30 to 40 minutes.
