BRAISED CHICKEN WITH PRUNE SAUCE

Braised Chicken with Prune Sauce image

I recieved this recipe from a 60-year-old Russian woman while on student exchange in Moscow. Unlike most Russian dishes, this dish is relatively easy to prepare, but it is very elegant. I reccomend it with borscht and meat dumplings.

MOROCCAN BRAISED CHICKEN

Moroccan Braised Chicken image

The prunes and spices are what makes this Moroccan dish.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Time 1h20m

Number Of Ingredients 8

4 tablespoons olive oil
6 whole chicken legs, (about 12 ounces each), drumsticks and thighs attached, skin removed
Coarse salt and ground pepper
1 large onion, halved and thinly sliced
1 teaspoon turmeric
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 1/2 cups large pitted prunes, (dried plums)

Steps:

  • In a large (5-quart) heavy pot, heat 2 tablespoons oil over medium-high. Season chicken generously on all sides with salt and pepper. Place 3 chicken legs in pot; cook, turning once, until browned, about 10 minutes total. Transfer to a plate. Repeat with remaining chicken and oil.
  • Add onion and 1/4 cup water to pot; cook, stirring to loosen browned bits on bottom. Add turmeric, ginger, and cinnamon; cook, stirring occasionally, until onion has softened, about 5 minutes. Return chicken to pot. Add 2 cups water and half the prunes; bring to a boil. Reduce heat; partially cover, and simmer until chicken is cooked through and very tender, about 45 minutes.
  • Transfer chicken to a platter; cover tightly with aluminum foil to keep warm. Add remaining prunes to pot; raise heat to high. Continue to cook, stirring occasionally, until sauce has thickened, about 10 minutes more. If not serving immediately, top chicken with sauce, cover and refrigerate up to 1 day in an airtight container. Otherwise, divide chicken among serving plates, and top with sauce.

THE SILVER PALATE'S CHICKEN MARBELLA

The Silver Palate's Chicken Marbella image

If there's such a thing as boomer cuisine, it can be found in the pages of "The Silver Palate Cookbook" by Sheila Lukins and Julee Rosso. With its chirpy tone and "Moosewood"-in-the-city illustrations, the book, published in time for Mother's Day in 1982, gave millions of home cooks who hadn't mastered the art of French cooking the courage to try sophisticated dishes like escabeche, wild mushroom soup and that new thing called pesto. This recipe, also in the book, came to The Times in a 2007 article celebrating the 25th anniversary edition. The briny-sweet combination once seemed as risky (capers! prunes!) as the East Village, but now it's considered as classic as Grand Central.

Time 1h20m

Yield 6 to 8 servings

Number Of Ingredients 14

1/2 cup olive oil
1/2 cup red wine vinegar
1 cup pitted prunes
1/2 cup pitted Spanish green olives
1/2 cup capers, with a bit of juice
6 bay leaves
1 head of garlic, peeled and puréed
1/2 cup fresh oregano, chopped, or 1/4 cup dried oregano
2 teaspoons of salt
1/4 teaspoon freshly ground pepper
2 chickens, 3 1/2 to 4 pounds each, quartered
1 cup dry white wine
1 cup brown sugar
2 tablespoons finely chopped flat-leaf parsley

Steps:

  • In a large bowl, combine the olive oil, vinegar, prunes, olives, capers and juice, bay leaves, garlic, oregano, salt and pepper. Add the chicken pieces and turn to coat. Refrigerate overnight.
  • Preheat the oven to 350 degrees. Arrange the chicken in a single layer in a shallow roasting pan; spoon the marinade over it evenly. Pour in the wine and sprinkle the chicken with the brown sugar.
  • Bake until the thigh pieces yield clear yellow juice when pricked with a fork, 50 to 60 minutes, basting two or three times with the pan juices once the chicken begins to brown. (When basting, do not brush off the sugar. If the chicken browns too quickly, cover lightly with foil.)
  • Transfer the chicken pieces to a warm serving platter and top with the prunes, olives and capers; keep warm. Place the roasting pan over medium heat and bring the pan juices to a boil. Reduce to about 1/2 cup. Strain into a heatproof bowl, add the parsley and pour over the chicken.

Tips:

  • To achieve tender and flavorful chicken, opt for a whole chicken or chicken pieces with bones and skin. Bone-in chicken releases more flavor during the braising process, resulting in a richer dish.
  • Generously season the chicken with a combination of salt, pepper, garlic powder, and paprika. This simple seasoning blend enhances the natural flavors of the chicken and creates a savory crust.
  • Use a variety of dried fruits for a complex and unique flavor profile. Prunes, apricots, dates, and raisins are all excellent choices. Plump and moist dried fruits will rehydrate during the braising process and contribute a sweet and tangy flavor to the dish.
  • Enhance the flavor of the braising liquid by adding aromatic vegetables like onions, carrots, and celery. These vegetables will caramelize during the braising process, adding depth and richness to the sauce.
  • For a richer and more flavorful sauce, deglaze the pan with either white wine or chicken broth before adding the braising liquid. Deglazing helps to loosen any browned bits from the bottom of the pan, infusing the sauce with extra flavor.
  • Cover the chicken and braising liquid tightly to create a moist and flavorful cooking environment. The covered pot allows the chicken to cook evenly and prevents the liquid from evaporating too quickly.
  • Braising is a low and slow cooking method, so be patient and allow the chicken to cook for the full time indicated in the recipe. Longer cooking times result in fall-off-the-bone tender chicken.

Conclusion:

Braised Chicken with Prunes is a classic comfort food dish that combines tender chicken, sweet and tangy dried fruits, and a rich and flavorful sauce. The low and slow cooking method ensures that the chicken is cooked to perfection, while the dried fruits add a unique and delightful flavor dimension. Whether you serve it with mashed potatoes, rice, or your favorite side dish, this braised chicken dish is sure to be a hit at your next family gathering or dinner party. Enjoy the deliciousness of braised chicken with prunes in the comfort of your own home.
