BRAISED CELERY

Celery finds its way into all kinds of dishes, but we rarely appreciate the stalks on their own. Get to know this vegetable anew by braising it with thyme in this easy, five-ingredient dish.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Time 1h10m

Number Of Ingredients 6

2 large heads celery, outer stalks removed
Coarse salt and freshly ground pepper
4 to 6 large sprigs thyme
6 tablespoons unsalted butter, cut into small pieces
2 1/2 cups low-sodium chicken broth
1/4 cup extra-virgin olive oil

Steps:

  • Preheat oven to 375 degrees, with rack in upper third. Cut each head of celery in half lengthwise, and peel larger stalks with a vegetable peeler. Trim 1/4 inch from bases (keeping heads intact), then trim tops so each half is about 12 inches long. Arrange celery in a single layer, cut-sides up, in a 9-by-13-inch baking dish. Season generously with salt and pepper; scatter with thyme and dot with butter. Pour in broth and oil.
  • Cover with parchment-lined foil. Bake until celery is knife-tender, 40 to 45 minutes. Turn oven to broil; remove foil. Spoon juices over celery and broil until lightly charred in spots, 5 to 10 minutes. Serve.

CELERY SALAD WITH APPLES AND BLUE CHEESE

Celery Salad With Apples and Blue Cheese image

Celery is perhaps at its best in salad: Its flavor is at its brightest and its crunch is unapologetically assertive. Celery root complements the chopped stalks, apples add sweetness and blue cheese - celery's classic cohort - provides punch. Flavorful enough to stand on its own, this salad isn't so striking that it doesn't play well with others. Celery salad makes a welcome addition to the Thanksgiving table, particularly since the crunchy salad ingredients are strong enough to stay sturdy if refrigerated overnight.

Time 20m

Yield 8 servings

Number Of Ingredients 12

5 tablespoons extra-virgin olive oil
1/4 cup finely chopped shallot
4 teaspoons coarse mustard
1 teaspoon finely grated fresh lemon zest, plus 4 teaspoons lemon juice (from 1 lemon)
1 teaspoon granulated sugar
Kosher salt and freshly ground black pepper
1 head celery, trimmed, stalks peeled and thinly sliced on the diagonal, leaves reserved
2 tart red apples, such as Pink Lady
1 small celery root (about 12 ounces)
1 packed cup fresh parsley leaves, plus more for garnish
1/2 cup coarsely chopped roasted, salted almonds
1 cup crumbled bold, creamy but firm blue cheese (4 to 5 ounces)

Steps:

  • Prepare the vinaigrette: In a large bowl, whisk together the olive oil, shallot, mustard, lemon zest and juice, and sugar; season to taste with salt and pepper. Add the sliced celery and toss to coat.
  • Core the apples, then slice them lengthwise into very thin wedges using a knife or mandoline. Add to the sliced celery and toss to coat. Peel or slice off the outer skin and layers of the celery root until no brown skin remains. Cut the celery root in half lengthwise, then slice into very thin half-moons using a knife or a mandoline. Add to the celery and apple mixture and toss to coat. (The salad will hold up fairly well refrigerated for 1 to 2 hours - or even overnight - from this point.)
  • Just before serving, add the parsley, almonds and half the cheese, and toss to combine; season to taste with salt and pepper.
  • Transfer to a shallow serving bowl or platter; top with the remaining cheese, the reserved celery leaves and fresh parsley leaves. Serve immediately.

Yield 4 servings

Number Of Ingredients 12

¼ cup plus 1 Tbsp. extra-virgin olive oil
1 bunch celery, leaves reserved, stalks sliced ½" thick on a diagonal
6-8 garlic cloves, thinly sliced
1 tsp. kosher salt, plus more
½ cup dry white wine or dry vermouth
A small handful hardy herb sprigs (such as rosemary, thyme, and/or sage; optional)
2½ cups low-sodium beef, chicken, or vegetable broth
2 cups Big-Batch Marinated Lentils
4 large eggs
Flaky sea salt
Freshly ground black pepper
Crusty bread (for serving; optional)

Steps:

  • Heat ¼ cup oil in a large high-sided skillet over medium-high. Add celery and toss to coat. Cook, stirring occasionally, until celery is very lightly browned, about 5 minutes, then add garlic and toss to coat. Cook, stirring occasionally, until garlic is deep golden brown and celery is tender and golden brown, 5-7 minutes. Mix in 1 tsp. kosher salt, then add wine and herbs (if using) and stir to combine. Cook until wine is reduced by half, about 2 minutes. Add broth and bring to a boil; stir in lentils. Cook until lentils are warmed through and flavors have come together, about 5 minutes. Taste and season with more kosher salt if needed. Fish out herb sprigs if using and discard.
  • Heat remaining 1 Tbsp. oil in a large nonstick skillet over medium. Crack eggs into skillet and cover with a lid (or a baking sheet if you don't have one), reduce heat to low, and cook just until egg whites are set but yolks are still runny, about 3 minutes.
  • Divide braised celery mixture among bowls. Top each with an egg and some celery leaves; sprinkle with sea salt and pepper. Serve with crusty bread, if desired.

Categories     Onions

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 7

1 head celery
1 medium onion
1 teaspoon fresh parsley leaves, chopped
2 slices bacon
10 ounces chicken stock
salt and black pepper
1 ounce butter

Steps:

  • Clean celery, cut into one-inch pieces and place in a casserole dish.
  • Finely chop bacon and onion and sprinkle over celery along with chopped parsley.
  • Pour on stock. Dot with knobs of butter. Cover dish and bake in a moderate oven for 30-45 minutes.

Tips:

  • Choose the right celery: Look for celery with crisp, bright green stalks and no blemishes. Avoid celery that is limp or has yellow or brown spots.
  • Cut the celery correctly: Cut the celery into 1-inch pieces on a diagonal. This will help the celery to cook evenly and will also make it more visually appealing.
  • Don't overcook the celery: Celery should be cooked until it is tender but still has a slight crunch. Overcooked celery will be mushy and bland.
  • Use a variety of spices: Celery pairs well with a variety of spices, including salt, pepper, garlic powder, onion powder, and paprika. You can also add fresh herbs, such as thyme, rosemary, or sage.
  • Serve celery as a side dish or main course: Braised celery can be served as a side dish with roasted chicken, fish, or pork. It can also be served as a main course with a side of rice or quinoa.

Conclusion:

Braised celery is a delicious and versatile dish that can be enjoyed as a side dish or main course. It is a great way to use up leftover celery and it is also a healthy and affordable meal. With its simple ingredients and easy preparation, braised celery is a dish that everyone can enjoy.
