This decorative Easter bread has whole eggs baked into it! Do not cook the whole eggs, as they will bake at the same time that the bread does. The eggs can also be dyed for extra color.

2 ½ cups all-purpose flour, divided
¼ cup white sugar
1 teaspoon salt
1 (.25 ounce) package active dry yeast
⅔ cup milk
2 tablespoons butter
2 eggs
5 whole eggs, dyed if desired
2 tablespoons butter, melted

Steps:

  • In a large bowl, combine 1 cup flour, sugar, salt and yeast; stir well. Combine milk and butter in a small saucepan; heat until milk is warm and butter is softened but not melted.
  • Gradually add the milk and butter to the flour mixture; stirring constantly. Add two eggs and 1/2 cup flour; beat well. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal size rounds; cover and let rest for 10 minutes. Roll each round into a long roll about 36 inches long and 1 1/2 inches thick. Using the two long pieces of dough, form a loosely braided ring, leaving spaces for the five colored eggs. Seal the ends of the ring together and use your fingers to slide the eggs between the braids of dough.
  • Preheat oven to 350 degrees F (175 degrees C). Place loaf on a buttered baking sheet and cover loosely with a damp towel. Place loaf in a warm place and let rise until doubled in bulk, about 45 minutes. Brush risen loaf with melted butter.

1 teaspoon sugar
1/2 cup warm water
3 teaspoons yeast
4 cups flour
4 tablespoons sugar
1 teaspoon salt
1/3 cup oil
2 eggs
1/4 cup warm water
1 egg yolk, beaten with
1 teaspoon water
sesame seeds or poppy seed

Steps:

  • Preheat oven to 400°F Dissolve 1 teaspoon sugar in 1/2 cup water in bowl of mixer. Sprinkle yeast over water and mix,let stand 10 minutes until foamy.
  • Add the next 6 ingredients to mixing bowl. Mix with dough hook for 6 minutes. Dough should be a little sticky.
  • Place in oiled bowl, cover and let rise in warm place until double in bulk.
  • Punch down dough. Let rise again until double in bulk.
  • Punch down again. Divide dough into 3 equal parts.
  • Roll dough into three long strands. Braid the strands, tucking ends under. Cover with towel and let double in bulk.
  • Brush with beaten egg yolk. Sprinkle with seeds. Bake at 400 F for approximately 30 minutes, until golden brown. The challah is done when it sounds hollow when thumped on the bottom.

2 tablespoons sugar

2-1/2 cups water

Sesame or poppy seeds

Steps:

  • In a bowl, combine 5 cups flour, yeast, sugar and salt. Heat water, butter and honey to 120°-130°. Add to dry ingredients; beat on medium speed. Separate one egg; refrigerate the egg white.   • Combine the yeast and warm milk and let sit until foamy, about 5 minutes.

  • For the chocolate sauce, combine bittersweet chocolate, butter, sugar, cocoa powder, cinnamon, espresso powder, and turbinado sugar in a medium sized mixing bowl and microwave for 1-2 minutes. Stir to combine and set aside.
  • Once the dough has doubled in size, transfer to a floured work surface and roll both pieces of dough into a rectangle roughly 10x15-inches.
  • Cover the dough with half of the chocolate sauce leaving an ½ inch - 1 inch of room on all sides.
  • Gently roll the dough up and repeat with second piece of dough and remaining chocolate sauce.
  • Using a bench scraper or a knife, carefully cut each log vertically in half making sure the seam is side down.
  • Lay one piece of dough horizontally and lay another piece over it vertically so you have a rough 'plus sign'.
  • Lay another piece horizontally over the vertical piece and above the other horizontal piece.
  • Lay the final piece vertically on the right of the other vertical piece having it go over the top horizontal piece but weaving it under the lower horizontal piece.
  • Starting with the bottom vertical piece on the right side, bring it to the left layering it over the other vertical lower piece.
  • Follow this method around the dough clockwise.
  • Once returned to the bottom lower vertical pieces. Take the original piece you crossed over (the lower left vertical piece) and cross that over to the right layering it over the last piece you used. Continue this counterclockwise until back at the bottom or you are unable to layer the dough anymore.
  • Tuck in the excess pieces of dough under the bread.
  • Transfer the bread into a parchment paper-lined baking sheet and brush with egg wash.
  • Bake for 35-45 minutes, until lightly browned and cooked through.

⅓ cup vegetable oil

4 teaspoons active dry yeast
4 whole eggs

1 tablespoon freshly squeezed lemon juice
1 clove garlic
3 tablespoons olive oil
½ cup grated Parmesan cheese
1 tablespoon chopped walnuts

1 cup warm water
2 ½ cups all-purpose flour, or more as needed

½ cup warm water (110 degrees F/45 degrees C)
2 cups hot milk
½ cup white sugar
½ cup butter
2 teaspoons salt
½ cup water
5 eggs
11 cups all-purpose flour
1 egg
2 tablespoons sesame seeds

Steps:

  • Proof yeast and 1/2 cup warm water in a large mixing bowl.
  • Combine hot milk, sugar, butter, salt, and 1/2 cup water in a medium bowl. Cool to 110 degrees.
  • In small bowl, slightly beat 5 eggs, then add to cooled milk mixture. Add milk mixture to yeast mixture. Add 2 cups flour and beat until smooth. Slowly add remaining flour until it forms a stiff dough. Knead on a floured board for 10 minutes (5 minutes with a bread hook). Place in a large glass or plastic bowl lightly greased. This Swedish custom is the symbolic start of Christmas in Scandinavia, a festival of lights that brightens the short, dark days of winter. I position seven birthday candle holders in my braided loaf before adding candles to prevent wax from melting on top of the bread.

Challah bread is one of the most satisfying things I make. I usually knead it in my Kenwood mixer, but there's nothing like kneading by hand to help relieve stress.

3/4-1 cup sugar (or ¾ cup honey)
1 tablespoon salt
1 (2 ounce) package yeast
2 1/2 cups lukewarm water (, or 2 cups only if using honey)
1/2 cup oil
5 eggs

Steps:

  • Mix together 2 1/2 cups flour with the sugar (honey), salt and yeast.
  • There is no need to dissolve the yeast first.
  • Add the water and oil.
  • Mix in 4 eggs.
  • Beat in another 1 1/2 cups of flour very well.
  • Add 4-5 cups of flour, until a very soft dough is formed.
  • Knead for about 10 minutes.
  • If using the dough hook, knead for about 7 minutes.
  • Let rise for 1-2 hours until doubled in size.
  • Alternately, let rise in the refrigerator overnight and then let warm to room temperature for about 1 or 2 hours.
  • Decide how many challahs you want, how many strands you want to braid in each.
  • Make a dough ball for each strand; roll them into ropes and braid.
  • Let rise covered for 1/2-1 hour.
  • Beat the remaining egg and brush on the challah.
  • Bake in a preheated oven at 325 F (150 C) for 30 minutes.
  • Apply egg wash once more and bake for another 30 minutes at 350 F (175 C).
  • This dough is enough for 4 medium sized challahs.
  • You can really let your imagination run rampant here, making intricate braids, placing the braids in a loaf pan, even then winding them into a circle.

2 1/2 cups bread flour
1/4 cup sugar
1/2 teaspoon salt
7 teaspoons vegetable oil

Steps:

  • Place ingredients into bread machine according to manufacturers directions.
  • Set on dough cycle.
  • Place dough onto a lightly floured board and divide into three equal parts.
  • Stretch or roll each part into 9" ropes and braid.
  • Place on greased cookie sheet, cover and let rise for about 30 minutes.
  • Preheat oven to 350°.
  • Mix together one egg yolk and a tablespoon of water and brush over bread, then sprinkle with sesame or poppy seeds, if desired.
  • Bake for 30 to 40 minutes or until golden brown.
  • Cool on wire rack.

1/2 cup water or 1/2 cup milk, for more richness
4 eggs
6 tablespoons oil, makes it more cake like
6 tablespoons sugar
1 1/2 teaspoons salt
5 cups flour
2 1/2 teaspoons instant yeast (OR AMOUNT SPECIFIED BY YOUR YEAST PER CUP OF FLOUR) or 2 1/2 teaspoons bread machine yeast (OR AMOUNT SPECIFIED BY YOUR YEAST PER CUP OF FLOUR)
2 egg yolks
2 tablespoons water
1/8 teaspoon salt

Steps:

  • In bread machine add to bread pan in order suggested by manufacturer, select dough setting, press start.
  • After beep, remove risen dough and follow directions on how to shape and bake below.
  • In Kitchen-aid stand mixer or like devise mix dry ingredients in bowl and turn on low speed to incorporate.
  • Add eggs one at a time, allow to mix in before adding next one, then add oil.
  • Turn mixer up to next speed (2 on Kitchen-aid), add milk in a slow stream, knead until soft, smooth, and warm, about 3 to 4 minutes.
  • Grease a bowl and place dough in bowl turning to coat.
  • Allow to rest and rise until double in size.
  • ***Shaping and baking***.
  • Punch down and turn out risen dough onto a lightly oiled surface, let rest 5 minutes, punching dough down gets it all excited, it needs to sit and relax.
  • Shape dough into a log and cut off 1/3; set aside.
  • Cut remaining dough into 3 pieces and roll into 18 inch ropes, start braid from middle and braid to one end, pinch together and tuck under, repeat with other side.
  • Cut set aside dough into 3 pieces and roll out to 13-15 inches long, repeat braiding method and place smaller braid on top of larger braid.
  • Grease a large 1/2 sheet baking sheet and place finished braid sideways from corner to corner.
  • Allow to rise until almost double, mix glaze ingredients and brush loaf gently.
  • Bake in preheated 350°F oven for 35-45 minutes, cover loosely with foil 15-20 minutes into baking to avoid over browning.

2 (.25 ounce) packages active dry yeast
⅓ cup warm water
4 eggs
1 egg yolk
1 cup white sugar
½ cup margarine, melted
1 teaspoon salt
1 cup light cream, warmed
½ cup cold light cream
7 cups all-purpose flour, or more as needed

Steps:

  • Dissolve yeast in warm water in a small bowl. Beat eggs and egg yolk together in a small bowl. Scoop out 2 tablespoons of beaten egg; keep refrigerated.
  • Preheat the oven to 170 degrees F (75 degrees C).
  • Combine sugar, margarine, and salt in a large bowl. Mix thoroughly until dissolved. Add warm and cool cream to the bowl. Stir in yeast mixture. Beat in eggs. Add flour 1 cup at a time, blending well between additions.
  • Turn dough out onto a floured board; knead until smooth and elastic, 5 to 7 minutes. Spray a clean bowl with cooking spray. Place dough inside and spray the top.
  • Cover dough with a dish cloth. Turn off oven and place dough inside. Allow to rest until doubled in size, about 1 hour.
  • Remove dough from the bowl and knead for 2 to 3 minutes. Split in half; split each half into thirds. Roll each section of dough into long, 24-inch snakes. Braid 3 together, making sure to secure the ends. Repeat with the remaining 3 sections.
  • Reheat the oven to 170 degrees F (75 degrees C). Line a cookie sheet with parchment paper. Transfer braids to the cookie sheet.
  • Turn off oven. Let braids rise in the warm oven for 45 minutes.
  • Remove braids from the oven and brush with reserved beaten egg. Preheat the oven to 350 degrees F (175 degrees C).

A great hit at any gathering. Contain yourself, you'll want to eat the whole loaf. You'll need to plan ahead just a bit. This recipe calls for a thawed loaf of Rhodes bread dough & it takes 6-8 hours for the bread to thaw at room temp. You can make the bread dough yourself or buy another brand. The dough rolls out much easier when it is warm. Roll it out as much as you can, then cover it and let it rest for 10 or 15 minutes. When you roll it out the 2nd time, it will roll much better. I have changed the recipe to use vegetarian "meat", you can use real meat if you like. And I add veggies to my spaghetti sauce-bell peppers, onions, eggplant, squash, and the list goes on! You can even leave out the spaghetti and just stuff it with veggies! From Bless This Food, who got it from the Rhodes website. You can also substitute pizza filling for the spaghetti filling and use pizza dough! Try it with alfredo sauce sometime, and you can also substitute spaghetti squash for the pasta, saving on carbs. So good! You can freeze this, you par-bake it and then freeze. Just enough to set it up without browning it, that way it can re-bake and cook all the way through until browning later. 1 loaf rhodes bread dough, thawed to room temperature (or use other brand, or make your own homemade dough)
6 ounces spaghetti, cooked (or use angel hair)
1 cup thick spaghetti sauce
1/2 cup cooked vegetarian Italian sausage (or cooked veggie crumbles or hamburger) (optional)
8 ounces mozzarella cheese, cut into 1/2 inch cubes
parmesan cheese
2 tablespoons butter, melted
1 1/2 teaspoons minced garlic
dried basil
smoked paprika (optional)
fresh parsley

Steps:

  • Pre heat oven to 350* F. Lay out a large sheet of parchment paper (Do it. Don't even bother trying to go sans the paper. I'm 99% sure you'll make a mess when trying to transfer) & roll your loaf out into a 12x16 rectangle. Cover with plastic wrap & let it rest while you get everything else ready (10 min or so).
  • Cook your spaghetti (or angel hair) according to directions & drain. Mix in the tomato sauce & vegetarian Italian sausage/hamburger (or use real meat-optional) & let it cool slightly while you continue to prepare.
  • Cut your block of mozzarella into chunks.
  • Melt the butter in a microwave safe dish & stir in the minced garlic & a few pinches of basil. Uncover the dough & using a pastry brush, brush a little more than 1/2 of the butter mixture onto the dough.
  • Now spoon the spaghetti lengthwise in a 4-inch strip down the center of the dough- top with the mozzarella chunks.
  • Make cuts 1 1/2 inches apart on the long sides of the dough to within 1/2 inch of the filling.
  • Start braiding by folding the strips towards the filling- braid left over right, right over left, etc etc- all the way down.
  • Finish the ends by pulling the strips over & tucking under the braid.
  • Then brush the remainder of the garlic butter all over the top of the bread. Sprinkle with the parmesan cheese, a little more basil & some garlic powder. Add smoked paprika to taste, a pinch or two. Sprinkle parsley over the top.
  • Slide the parchment paper to a large baking sheet & bake in your pre heated oven for 30 minutes, until golden brown. Let it rest for about 5 minutes & then slice to serve.

4-1/2 to 5 cups all-purpose flour
1 egg yolk
1 tablespoon cold water
1 tablespoon sesame seeds

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the oil, sugar, salt, eggs, food coloring and 3 cups flour. Beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky). , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. 1 1/2 cups warm milk
1 package dry yeast
4 tablespoons margarine, melted
1/2 cup sugar

4 1/2 cups flour (use more to knead)

  • Mix together water, warm milk, and yeast.
  • Add melted margarine, sugar, salt and flour.
  • Knead dough, place in bowl, cover and let rise in warm place 1 hour.

2 1/4 teaspoons active dry yeast (1 pkg)
1/2 cup warm water
1/2 cup all-purpose flour
2 large eggs, lightly beaten
2 egg yolks, lightly beaten
3 tablespoons vegetable oil
3 tablespoons sugar
1 1/4 teaspoons salt
2 1/2 cups bread flour
1 egg
1/4 teaspoon salt
1 -3 tablespoon poppy seeds (I prefer poppy seeds) or 1 -3 tablespoon sesame seeds (I prefer poppy seeds)

Steps:

  • Combine yeast and warm water in large mixing bowl or bowl of stand mixer.
  • Let stand until yeast is dissolved, about 5 minutes Add all-purpose flour, 2 large eggs and 2 egg yolks, 3 tbsp vegetable oil, sugar and salt.
  • Mix by hand or on low speed until blended.
  • Gradually stir in bread flour.
  • Knead for about 8 minutes by hand or with dough hook of mixer on medium speed until dough is smooth and elastic and doesn't stick to hands or bowl.
  • Transfer to oiled bowl and turn it over once to coat with oil.
  • Cover with plastic wrap.
  • Let rise in warm place until doubled in volume, about 1-1 1/2 hours.
  • Punch dough down, knead briefly, and refrigerate covered until it has again nearly doubled in volume, 4-12 hours.
  • To shape the dough: Divide dough into three pieces and weigh to be sure that they are of equal size.
  • On an unfloured work surface, roll into balls and let rest, covered loosely with plastic wrap, for ten minutes or so.
  • Grease a baking sheet and sprinkle it with cornmeal.
  • (You can also bake this on a pizza stone with cornmeal-covered parchment, which is what I do.) Roll each ball into a 13-14 inch-long rope, about 1.
  • 5 inches thick and slightly tapered at the ends.
  • Dust three dough ropes with rye flour (I just used AP flour) so that they will be more distinctly separated.
  • Place the three dough ropes side by side and pinch top ends together.
  • Lift left dough rope and place between right and middle ropes.
  • Lift right dough rope and place it between left and middle ropes.
  • Keep doing this until you reach the ends.
  • Tuck both ends of braid underneath loaf and set it on baking sheet.
  • Whisk together egg and salt and brush over the top of the loaf.
  • Don't skip this step--the egg will give you a shiny, beautifully browned challah loaf!
  • Loosely cover braid with lightly oiled plastic wrap.
  • Let rise in a warm place until not quite doubled, about 45 minutes.
  • Preheat oven to 375 degrees Fahrenheit.
  • Brush loaf again with egg wash.
  • If desired, sprinkle with poppy seeds or sesame seeds.
  • (I prefer poppy seeds.) Bake until crust is golden brown, and bottom of loaf sounds hollow when tapped, about 30-35 minutes.
  • Let cool on rack.
  • To freeze, allow to cool COMPLETELY and wrap thickly with plastic wrap.
  • To thaw, place in 200-250 degree oven until thawed, about 35-40 minutes.
