1/4 cup apple cider vinegar
2 tablespoons granulated sugar
1 tablespoon kosher salt
Fine sea salt and black pepper
2 pounds all-purpose potatoes, preferably Rooster or Yukon gold
1 cup buttermilk
1 1/2 cups all-purpose flour, sifted
1 teaspoon baking powder
4 to 6 tablespoons unsalted butter, as needed
Smoked salmon and sour cream, for serving (optional)

Steps:

  • Prepare the pickled red onions: Slice the red onion thinly from stem to stem, then transfer slices to a small heatproof bowl. In a small saucepan, combine the vinegar, sugar, salt and 1/2 cup water. Bring to a simmer over medium, stirring occasionally, until sugar and salt dissolve, then pour on top of onions; set aside.
  • Prepare the boxty: Fill a medium saucepan halfway with water; season generously with salt and bring to a boil over high heat.
  • Peel half the potatoes, then cut them into 1-inch cubes, tossing the cubes into the water as you go. Once the water comes to a boil, continue to cook until potatoes are soft, 10 to 15 minutes.
  • While the diced potatoes boil, peel the remaining potatoes, then grate them coarsely using a box grater. Season the grated potatoes generously with 2 teaspoons sea salt and 1 teaspoon pepper, toss to coat, then transfer them to a clean, dry kitchen towel. Squeeze the grated potatoes over a sink to remove the excess liquid, then transfer them to a large bowl.
  • Once the diced potatoes are soft, transfer them to a colander to strain, then transfer to the large bowl with the grated potatoes; mash until creamy, and mashed and grated potatoes are well combined.
  • Pour the buttermilk on top of the warm potato mixture and stir briefly just to combine.
  • Add the flour and baking powder and stir until thoroughly combined.
  • In a large cast-iron or nonstick skillet, heat 2 tablespoons butter over medium heat. Working in batches, spoon in the potato mixture using 1/3 cup measure to form small 3- to 4-inch-wide pancakes, leaving at least 1 inch of space between pancakes. Cook until nicely browned on both sides, 4 to 5 minutes per side. Repeat with remaining pancakes, adding more butter between batches as needed.
  • Serve pancakes topped with pickled red onions, and smoked salmon and sour cream, if you like.

1/4 cup thinly sliced scallions
1/2 cup all-purpose flour

Steps:

  • Make the mashed potatoes: Bring a saucepan of water fitted with a steamer insert to a boil over medium-high heat. Peel and cut potatoes into 1-inch pieces; add to steamer insert. Cover and cook until fork-tender.

2 large onions, sliced
6 large flat field mushrooms, roughly chopped
2 ounces Irish whiskey
1 pint cream
Salt
Watercress, for garnish

Steps:

  • Boxty Mix:
  • Wash and drain the raw potatoes at least twice to remove all starch. Place the raw and mashed potatoes in a large pot, add the flour and milk. Season and blend to a smooth consistency. Drop a small ladle full onto a hot griddle; push the mixture from the center outwards with the bottom of the ladle, cook for 2 minutes then flip the boxty over and cook through. Season with salt and pepper.
  • Gaelic Filling:
  • Sear the fillets on both sides in an oiled, well-heated pan, remove from the pan and set aside. Fry the onions and mushrooms until soft, add the whiskey (careful not to burn your eyebrows off), add the cream, cracked pepper and season with salt, to taste. Reduce a little then return the fillets to the pan continue cooking until the sauce thickened to the right consistency.
  • Gaelic boxty:
  • Place 3 medallions onto each hot boxty, cover with sauce and roll over to make an omelette shape spoon some sauce on the top and garnish with watercress.

2 eggs
1/2 cup milk
1/2 tablespoon salt
2 tablespoons oil
1/2 cup flour
1/4 cup peeled finely grated potato
1/2 tablespoon baking soda
1/2 cup mashed potatoes
6 ounces sliced lean corned beef
1/2 cup cabbage, chopped
1/4 cup white wine
1 cup heavy whipping cream
1/4 teaspoon salt
1/2 cup mashed potatoes
1/4 cup good irish stout beer
1/2 cup milk
1/4 cup grated parmesan cheese
1/8 cup whole grain mustard
2 tablespoons butter

Steps:

  • Boxty: Peel and grate potatoes into a bowl quickly. Add eggs, milk, oil, half the mashed potatoes and mix.
  • In a separate bowl sift together flour, salt and baking soda. Mix the egg mixture and the flour mixture together until blended.
  • Let stand for 2 hours before using.
  • Filling: Add the corned beef to a sauté pan with the oil and begin to brown.

  • Saute until cooked through and remove from pan.

2 to 3 tablespoons white wine vinegar
1 clove garlic, smashed
Kosher salt
2 eggs
Olive oil, for frying
2 lamb loins

3/4 cup mayonnaise
1 tablespoon chopped chives

Steps:

  • For the boxty pancakes: Preheat the oven to 200 degrees F. Grate 5 of the potatoes on the largest holes of a box grater. Toss with the vinegar and squeeze out the excess water between paper towels.
  • Cut the remaining 3 potatoes into 6 pieces each. Place them in a saucepan with the garlic and cover with water by about 1 inch, sprinkling generously with salt. Bring to a boil, reduce to a simmer and cook until the potatoes are fork tender, 10 to 12 minutes. Drain. While still hot, pass the potatoes through a food mill or mash with a potato masher.
  • Combine the grated potatoes with the mashed potatoes. Beat the eggs and add into the potatoes. Sprinkle with salt.
  • Coat a large saute or cast-iron pan with olive oil over medium-high heat. Make a 1 1/2-inch patty and cook until brown and crispy, 3 to 4 minutes per side. Eat the first pancake to make sure the potato mixture is seasoned perfectly. Season again, if needed.
  • Working in batches, make and cook all the pancakes, blotting on paper towels and seasoning with salt. Hold the pancakes on a sheet tray in the oven to keep warm until serving.
  • For the lamb loin with whole-grain mustard aioli: Sprinkle the lamb with salt and brush with whole-grain mustard. Coat a large saute pan with oil over medium-high heat. When the oil starts to shimmer, add the lamb and sear on all sides, being careful not to burn the brown bits on the bottom of the pan. Cook until a thermometer reads 135 degrees F when inserted into the thickest part of the loins. Transfer to a small sheet tray and tent with aluminum foil. Allow to rest at least 10 minutes.
  • Combine the mustard, mayonnaise, chives and parsley in a medium glass mixing bowl.
  • Thinly slice the lamb. Place a dollop of the aioli on top of the boxty, and top with a slice of lamb and another dollop of the aioli.

1 c mashed potato

  • 1. Grate the raw potatoes into a bowl. Turn out onto a cloth and wring, catching the liquid. This will separate into a clear fluid with starch at the bottom. Pour off the fluid and scrape out the starch and mix with the grated and mashed potatoes. Sieve the dry ingredients and mix in along with the melted butter. Add a little milk if necessary to make a pliable dough. Knead lightly on a floured surface. Divide into four and form large, flat cakes. Steps:

  • Mix together mashed potatoes, shredded potatoes, egg, and buttermilk.
  • Season with granulated garlic, salt, and pepper and thicken with flour.
  • You do not want the mixture to thick, as you need a flat pancake to put meat/peppers into, cradled like a taco.
  • Preheat a skillet, spray with non-spray cooking spray just before adding boxty mixture.
  • Cook mixture as a pancake on medium to medium-low heat.
  • Flip over and continue to cook until done.
  • In a separate pan fry sausages until nicely browned, remove and slice.
  • Return to pan, adding sliced peppers cooking until tender and sausages are browned.
  • Mix together and cook until simmering: Shiner Bock beer (or other Bavarian type beer), beef stock, cheddar cheese, and granulated garlic, salt and pepper to make Beer Cheese Sauce.
  • Top cooked pancake with sausage and peppers to make boxty.
  • Pour beer cheese sauce over boxty.

1 pound turnips, peeled (about 3 small)
1/4 cup coconut milk, divided
1/2 tsp sea salt
1/2 tsp pepper
1 egg
2 tablespoon arrowroot flour
4 thick bacon slices or rashers
2 banger sausages
2 eggs

Steps:

  • Cut 1 1/2 turnips into small chunks. In a small saucepan, bring two cups of water up to a boil with the turnips. While turnips are boiling, shred other 1 1/2 turnips with a cheese grater. With a dish rag, squeeze out any excess liquid of the shredded turnips. Once boiled turnips are finished cooking, drain and add 2 tablespoons coconut milk. Blend until smooth with an immersion blender. Mix in shredded turnips, remaining coconut milk, egg, arrowroot, salt and pepper. In a flat-bottomed skillet, crisp 4 slices of bacon over medium heat. Once bacon is done, dice two slices and add to boxty batter. Reserve a little of the bacon fat from the skillet. With the remaining bacon fat, scoop 1/4 cup boxty batter onto hot skillet. You don't want the pancakes to be too big or they won't flip. Cook for 7 to 10 minutes until patty is brown. Flip and cook for another 5 to 7 minutes. This should make about 10 small pancakes. Add more bacon fat as needed and continue the process of frying the pancakes. Cook bangers for 7 to 10 minutes per side, covered. In banger fat, fry up eggs to your liking. Fill your plate with boxty, bangers, bacon and eggs. Enjoy!

3 freshly peeled+ grated raw potato
3 cooked,peeled ,smashed potato
9 oz plain flour
1 tsp baking powder
1/2 tsp sea salt + black cracked pepper
3 oz butter melted
1/2 c full fat milk
oil for frying

Steps:

  • 1. The raw grated potato squeezed in paper towel to get rid of extra water. Mix the raw grated potato and mashed potatoes together. Sieve the flour, salt, baking powder to the potatoes ,add the black pepper with the melted butter. Add a little milk and stir to you have a dough. Knead gently on to a floured surface till the dough becomes smooth and crack free. pull the dough into 8 pieces, roll in to balls and flatten to make circular shapes make about 2cm in thickness.
  • 2. Cook on a oiled pan over gentle heat, until the boxty is a dark golden brown, turn over and cook other side. Serve with fried egg and some crispy bacon...
