RHUBARB CUSTARD CAKE
Rhubarb thrives in my northern garden and is one of the few crops the pesky moose don't bother! Of all the desserts I've tried, this rhubarb custard cake is my first choice. It has old-fashioned appeal but is so simple to prepare. -Evelyn Gebhardt, Kasilof, Alaska

BOX-MIX RHUBARB DUMP CAKE
This recipe is wonderful. Very fast and easy to mix up can also use frozen rhubarb. Serve it nice and warm with some ice-cream or cool whip. The marshmallows give the cake a nice golden brown. Preparation time does not include time to clean and dice rhubarb. I put 12 for serving size according to the box, but I am sure you can get more out of a 9x13 inch pan. The recipe is sweet so a smaller piece may be better. Enjoy!

- If baking in an electric oven, you may need to increase baking time; depending upon oven and altitude.
- Chef sheerkerry baked hers in an electric oven for 1 hour and 10 minutes.
Tips:
- To achieve the perfect texture for your dump cake, ensure the rhubarb is cut into small pieces so that it cooks evenly throughout the cake.
- If your rhubarb is particularly tart, consider adding an extra ¼ cup of sugar to the filling mixture for a sweeter taste.
- For a delightful crunchy topping, use a mixture of brown sugar, flour, and oats. You can also add chopped nuts or shredded coconut for an extra layer of flavor.
- Don't overmix the batter; a few gentle stirs will suffice to combine the ingredients. Overmixing can result in a tough, dense cake.
- To prevent a soggy bottom, avoid pouring the batter directly onto the rhubarb. Instead, sprinkle the topping mixture over the rhubarb first, then pour the batter on top.
- For a golden-brown crust, place the dump cake on the middle rack of your oven. If the top starts to brown too quickly, cover it with a piece of aluminum foil.
Conclusion:
Box mix rhubarb dump cake is a delightful and effortless dessert that combines the flavors of sweet rhubarb and a crispy topping. With its simple preparation and delicious taste, this cake is perfect for any occasion. Whether you're a seasoned baker or a beginner in the kitchen, this recipe is sure to impress.
