1 pound boneless (skinless chicken breasts, bite-sized pieces)
1 Tablespoon olive oil
1 1/2 teaspoons garlic (minced)
1 teaspoon Italian seasoning
12 oz. bow tie pasta (farfalle pasta)
2 cups broccoli florets (bite-sized)
1 pint cherry tomatoes
1 cup basil pesto (you can use any, but the pesto found in the refrigerated section is fresher, just make sure the date is good)
1/3 cup finely grated parmesan cheese
1 Tablespoon chopped fresh parsley

Steps:

  • Boil a large pot of water and cook pasta according to package directions. Add the broccoli into the pasta pot 1 minute before turning off the heat.
  • While the pasta is cooking, heat the olive oil in a large pan over medium high heat.
  • Add the chicken into the pan with salt and pepper to taste.
  • Cook the chicken 4-5 minutes per side or until lightly browned.
  • Add the tomatoes, garlic and Italian seasoning into the chicken pan and cook for 2-3 minutes until the chicken has an internal temperature of 165 degrees Fahrenheit.
  • Drain the pasta and broccoli and return them to the pot.
  • Add the chicken and tomatoes to the pot.
  • Add the pesto and parmesan cheese and combine.
  • Garnish with parmesan cheese and parsley.

8 cups broccoli florets (4 heads)
1/2 pound farfalle (bow tie) pasta
2 tablespoons unsalted butter
2 tablespoons good olive oil
1 teaspoon minced garlic
1 lemon, zested
1/2 teaspoon freshly ground black pepper
1 tablespoon freshly squeezed lemon juice
1/4 cup toasted pignoli (pine) nuts
Freshly grated Parmesan, optional

Steps:

  • Cook the broccoli for 3 minutes in a large pot of boiling salted water. Remove the broccoli from the water with a slotted spoon or sieve. Place in a large bowl and set aside.
  • In the same water, cook the bow-tie pasta according to the package directions, about 12 minutes. Drain well and add to the broccoli.
  • Meanwhile, in a small saute pan, heat the butter and oil and cook the garlic and lemon zest over medium-low heat for 1 minute. Off the heat, add 2 teaspoons salt, the pepper, and lemon juice and pour this over the broccoli and pasta. Toss well. Season to taste, sprinkle with the pignolis and cheese, if using, and serve.
  • To toast pignolis, place them in a dry saute pan over medium-low heat and cook, tossing often, for about 5 minutes, until light brown.

4 tsp. lemon juice
1 1/2 tsp. grated lemon zest
1 1/2 tsp. capers, rinsed and drained, optional
5 large garlic cloves, peeled
12 oz. farfalle pasta

Steps:

  • 1. Toast hazelnuts in skillet 3 to 5 minutes, or until golden, shaking skillet often. Cool, coarsely chop, and set aside. 2. Meanwhile, bring large pot of water to a boil. Cook broccoli in boiling water 2 to 3 minutes, or until tender. Remove with slotted spoon. Drain, and rinse under cold water. Drain again. 3. 1 large head broccoli steamed

1 1/2 teaspoons capers, rinsed and drained (optional)
