Time 35m

Yield 8 serving(s)

Number Of Ingredients 11

8 cups broccoli florets (from 4 heads)
1/2 lb farfalle pasta (bow tie)
2 tablespoons unsalted butter
2 tablespoons extra virgin olive oil
1 teaspoon minced fresh garlic
1 lemon, zest of
2 teaspoons kosher salt
1/2 teaspoon fresh ground black pepper
1 tablespoon fresh lemon juice
1/4 cup pine nuts, toasted
freshly grated parmesan cheese (optional)

Steps:

  • Bring a large pot of salted water up to the boil, add broccoli florets, and cook for just 3 minutes; you need the water to cook the pasta, so do not drain; instead, remove broccoli with a large slotted spoon and place into a large serving bowl.
  • Making sure the water is still boiling, add pasta; cook according to pkg directions (about 10 to 12 minutes), then drain well and add cooked pasta to the broccoli.
  • While pasta is cooking, toast the pine nuts: place a small skillet over medium-low heat and add nuts to skillet; stir often--it will take about 5 minutes for them to toast; watch carefully so they do not burn; set aside.
  • Now heat the butter and oil in a small skillet over medium-low heat; add both minced garlic and lemon zest and saute for one minute.
  • Remove skillet from burner and add the salt and pepper, and the lemon juice; stir to combine then pour over the broccoli and pasta in the large bowl; toss.
  • Taste pasta and broccoli mixture and add more salt or pepper if necessary.
  • Sprinkle toasted pine nuts and parmesan over dish, and serve.

Tips:

  • Choose the right pasta: Bowtie pasta (also known as farfalle) is the traditional choice for this dish, but you can use any short pasta shape, such as penne, rotini, or fusilli.
  • Cook the pasta al dente: This means cooking it until it is still slightly firm to the bite. Overcooked pasta will be mushy and won't hold the sauce as well.
  • Use fresh broccoli: Fresh broccoli will have a brighter green color and a more crisp-tender texture. If you're using frozen broccoli, be sure to thaw it completely before cooking.
  • Don't overcrowd the pan: When cooking the broccoli, be sure to use a large skillet or saucepan so that the broccoli has room to cook evenly. Overcrowding the pan will prevent the broccoli from cooking evenly and will make it more likely to become soggy.
  • Season the broccoli well: Broccoli is a mild-flavored vegetable, so it's important to season it well with salt, pepper, and other spices. You can also add a squeeze of lemon juice or a drizzle of olive oil to brighten up the flavor.
  • Make the sauce creamy: The sauce for this dish is made with a combination of butter, flour, and milk. You can use heavy cream instead of milk for a richer, creamier sauce.
  • Add cheese: Cheese is a classic addition to this dish. You can use Parmesan, cheddar, or mozzarella cheese. Add it to the sauce or sprinkle it on top of the pasta before serving.

Conclusion:

Bowties and Broccoli is a quick and easy weeknight meal that the whole family will love. It's a great way to get a serving of vegetables into your kids, and it's also a delicious and satisfying meal for adults. With a few simple tips, you can make this dish even better.
