1 pound bow tie pasta
1 tablespoon olive oil
2 cloves garlic (minced)
15 oz petite diced tomatoes
1/2 teaspoon sugar
salt & pepper (to taste)
3/4 cup heavy cream
2/3 cup parmesan cheese (hand grated )
.5 oz fresh basil leaves (chopped)

Steps:

  • Bring large pot of salted water to boil. Cook bowtie pasta until al dente and drain. Set aside.
  • While pasta is cooking heat olive oil over medium heat. Cook garlic for 30 seconds to 1 minute until fragrant.
  • Pour in can of diced tomatoes with sugar, salt and pepper. Simmer gently for 2 minutes.
  • Pour in heavy cream and reduce heat to low.
  • Sprinkle in parmesan cheese and stir to melt. Taste and adjust seasonings. It may need more sugar and/or salt, depending how acidic your tomatoes were.
  • Add hot pasta and stir to coat in sauce. Add chopped basil and stir.
  • Serve immediately.

four ripe medium tomatoes, preferably new jersey beef steaks, chopped
1/2 cup torn fresh basil leaves
1/3 cup extra virgin olive oil
one garlic clove, finely chopped
salt and pepper
1 pound bow ties, farfalle
eight ounces fresh mozzarella, cut into small dice

Steps:

  • 1. in a large pasta serving bowl, mix the tomatoes, basil, oil, garlic, and salt and pepper to taste. Let stand at room temperature up to two hours.
  • 2. Bring at least 4 quarts of salted water to a boil in a large pot. Add the pasta, stir well and cook over high heat, stirring frequently, until the pasta is al dente, tender yet firm to the bite.
  • 3. Drain the pasta and toss it with the sauce. Add the mozzarella and toss again. Serve at once. Serves 4 to 6.

4 tablespoons dried basil
1 tablespoon minced pine nuts
1 tablespoon olive oil
3 ounces sun-dried tomatoes
⅛ cup olive oil
3 cloves garlic, minced
8 ounces fresh mushrooms, sliced

1 teaspoon cayenne pepper
1 (16 ounce) package bow tie pasta

Steps:

  • Make pesto: In a small mixing bowl, combine basil, pine nuts, and 1 tablespoon olive oil.

3/4 cup Pesto, recipe follows
1/2 pint cherry tomatoes, halved
1 cup crumbled feta cheese
Kosher salt and freshly ground black pepper
Olive oil, as needed

  • Bring a large pot of salted water to boil. Stir in the bow ties and cook, stirring occasionally, until al dente, about 10 minutes. Drain the pasta and run it under cold water just until it stops steaming. Bounce the pasta around to get rid of as much water as you can.
  • Dump the pasta into a large serving bowl. Stir in the pesto until the pasta is coated. Toss in the cherry tomatoes and the crumbled feta.   • Place all ingredients with 1/2 cup of the oil in a blender and blend. Gradually drizzle in the remaining 1/4 cup of oil until pesto is thick and smooth.
