Bow Ties with Asparagus, Cream, and Prosciutto image

Number Of Ingredients 6

1 pound fresh asparagus spears, trimmed
salt
1 cup heavy cream
1 pound farfalle pasta
1/2 cup freshly grated Parmigiano-Reggiano
2 ounces sliced imported Italian prosciutto, cut crosswise into thin strips

Steps:

  • 1 In a large skillet, bring about 2 inches of water to a boil. Add the asparagus and salt to taste. Cook until the asparagus are just tender and bend slightly when lifted from the water. Cook 5 minutes or until slightly thickened. 3 Bring a large pot of water to a boil. Add 2 tablespoons of salt, then the pasta. Stir well. Cook over high heat, stirring frequently, until the pasta is al dente, tender yet still firm to the bite. Set aside some of the cooking water. Drain the pasta. 4 Pour the pasta, cream, and cheese into a large serving bowl and toss well. Add a little cooking water if the sauce seems too thick. Add the asparagus and prosciutto and toss again. Tips:

  • Choose fresh asparagus: Look for asparagus spears that are bright green and have tightly closed tips. Avoid spears that are wilted or have brown or yellow spots.
  • Cook the asparagus properly: Asparagus can be cooked in a variety of ways, but the most popular methods are boiling, steaming, and roasting. Boiling is the quickest method, but it can also result in mushy asparagus. Steaming is a gentler method that preserves the asparagus's nutrients and flavor. Roasting is a great way to bring out the asparagus's natural sweetness.
  • Don't overcook the asparagus: Asparagus should be cooked until it is tender-crisp. Overcooked asparagus will be mushy and lose its flavor.
  • Use high-quality ingredients: The better the ingredients you use, the better your dish will taste. Use fresh, organic ingredients whenever possible.
  • Season the asparagus well: Asparagus has a mild flavor, so it's important to season it well. Salt, pepper, and garlic are all good choices.
  • Serve the asparagus immediately: Asparagus is best served immediately after it is cooked. This will help to preserve its flavor and texture.

Conclusion:

Bow ties with asparagus cream and prosciutto is a delicious and elegant dish that is perfect for a special occasion. The asparagus cream sauce is rich and flavorful, and the prosciutto adds a salty, savory touch. This dish is sure to impress your guests.
