PASTA WITH SMOKED SALMON AND CAPERS

Pasta with Smoked Salmon and Capers image

Another classic combination, this dish makes people think you went to a lot of trouble. Actually it's quite simple. Any shape of pasta works, but I prefer a small noodle such as shells or bowties. Despite what an Italian might otherwise recommend, I like to serve this dish with freshly grated Parmesan cheese.

Yield Serves 4

Number Of Ingredients 10

1/4 cup extra-virgin olive oil
1 small onion, chopped
1/4 pound smoked salmon, chopped
1 cup heavy cream (a.k.a. whipping cream)
3 tablespoons capers, drained
Salt and freshly ground black pepper to taste
N/A freshly ground black pepper
1 pound pasta, cooked al dente, drained (reserving about 1/4 cup of the cooking water), and tossed with olive oil
N/A olive oil
Freshly grated imported Parmesan cheese

Steps:

  • In a large skillet, heat the olive oil over medium-high heat. Add the onion and sauté until translucent, but not browned. Add the smoked salmon and continue cooking just until the salmon turns opaque, 1 to 2 minutes. Pour in the cream and add the capers. Taste and adjust seasoning with salt and pepper. Be careful how much salt you add because the smoked salmon and capers are both salty. Add the pasta and toss to coat. If there doesn't appear to be enough sauce, add a couple of tablespoons of the pasta cooking water to thin it down. Serve with freshly grated Parmesan cheese.

BOW-TIE PASTA WITH SMOKED SALMON (FARFALLE AL SALMONE AFFUNICATO

Bow-Tie Pasta With Smoked Salmon (Farfalle Al Salmone Affunicato image

Fabulous, quick and tasty pasta dish. I make this often and my husband inhales this (it is a sight to behold, let me tell you). Serve with a big loaf of garlic bread and your guests will be in heaven. It serves 4 people (well, normal people- my husband can eat more than half of this himself) but you can easily double for a larger crowd.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 10

1 lb bow tie pasta (farfalle)
3 tablespoons butter
3 tablespoons purple onions, diced
2 teaspoons garlic, minced (or more)
8 ounces smoked salmon, flaked into chunks
4 -6 ounces vodka (start with 4 the first time and adjust up if you like more next time)
3 cups heavy cream
3/4 cup tomato sauce
1 teaspoon dried basil
salt and pepper

Steps:

  • Boil water and cook pasta according to package directions. DO NOT ever add oil to the water! It will make the sauce slide off the pasta later.
  • In a medium saucepan, melt butter and add onion and garlic. Cook over medium heat until onion starts to sweat and soften. Add salmon and cook until it starts to cook a little, about 2-3 minutes. Add vodka and flame off alcohol.
  • Add the cream, tomato sauce, basil, salt and pepper. Bring sauce to a boil and simmer, reducing until it is thick, about 8 minutes or so.
  • Serve over pasta and enjoy! Pass the grated cheese on the side.

Tips:

  • Use high-quality smoked salmon: The quality of the smoked salmon will greatly impact the flavor of the dish, so be sure to use the best you can find.
  • Cook the pasta al dente: This means cooking it until it is tender but still has a slight bite to it. Overcooked pasta will be mushy and unpleasant.
  • Use a good quality olive oil: Extra virgin olive oil is the best choice for this recipe, as it has a rich, fruity flavor that will complement the other ingredients well.
  • Don't overcrowd the pan: When cooking the salmon, be sure to not overcrowd the pan. This will prevent the salmon from cooking evenly and will result in some pieces being overcooked while others are undercooked.
  • Season the salmon well: Before cooking the salmon, be sure to season it well with salt and pepper. This will help to enhance the flavor of the fish.
  • Use fresh lemon juice: Fresh lemon juice is essential for this recipe, as it adds a bright, citrusy flavor that helps to balance out the richness of the smoked salmon and cream.
  • Don't overcook the sauce: The sauce for this dish should be cooked just until it is warmed through. Overcooking the sauce will make it thick and gloopy.
  • Serve immediately: This dish is best served immediately after it is made, as the pasta will start to absorb the sauce and become mushy if it sits for too long.

Conclusion:

Bow tie pasta with smoked salmon and lemon sauce is a delicious and easy-to-make dish that is perfect for a quick and easy weeknight meal. The combination of the rich, smoky salmon, the bright, citrusy lemon sauce, and the al dente pasta is simply irresistible. This dish is sure to please everyone at the table, and it is a great way to use up any leftover smoked salmon you may have.
