Bow Ties with Sausage, Tomatoes and Cream image

A friend gave this recipe to me a few years back, and my family can't seem to get enough of it. It sounds strange with cream in it, but that just enhances the flavor and texture. This is a very easy recipe.

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 13

12 ounces bow-tie pasta (farfalle)
2 boneless, skinless chicken breasts
Salt and freshly ground black pepper
1 tablespoon butter
1 tablespoon olive oil
2 cloves garlic, minced
1/2 cup low-sodium chicken broth, plus more if needed for thinning
1/2 cup half-and-half
1/4 cup heavy cream
1 cup good-quality grated Parmesan
1 cup halved grape tomatoes
4 ounces baby spinach
2 tablespoons fresh parsley, minced

Steps:

  • Bring a large pot of water to a boil. Cook the pasta according to the package directions. Drain and set aside.
  • Slice the chicken into thin strips and season with salt and pepper. Heat the butter and oil in a large skillet over medium-high heat. Add the chicken strips and cook until deep golden brown on both sides and done in the middle. Remove the chicken from the skillet and add the minced garlic. Cook the garlic for 1 minute, then pour in the broth. Let it bubble up and reduce for 1 1/2 to 2 minutes.
  • Next, add the half-and-half, cream and some salt and pepper. Add the Parmesan, whisking constantly until it's all combined. Allow the liquid to heat up and thicken for a few minutes. If it gets too thick, you may thin it with a little chicken broth.
  • When the sauce looks good, remove it from the heat. Return the cooked chicken to the skillet along with the grape tomatoes, spinach and pasta. Toss, taste, adjust the seasoning, top with minced parsley and serve immediately in the skillet!

2 tbsp. olive oil
1 lb. mild Italian pork sausage, casing removed
3 cloves garlic, chopped
1 lb. bowtie pasta
3 c. chicken broth
1 tsp. dried oregano
1 tsp. salt
1/2 tsp. ground black pepper
4 c. small broccoli florets (from 1 8-oz. piece of broccoli)
1/2 c. julienned sun-dried tomatoes, drained of oil

1/2 c. grated parmesan cheese, plus more for serving
2 tbsp. fresh lemon juice (from 1 lemon)
Red chili flakes, for serving (optional)

Steps:

  • Heat a large pot over medium-high heat. Add the olive oil, then the sausage. Cook, breaking the sausage into small pieces with a wooden spoon, until it is golden brown and no longer pink, about 6 minutes. With a slotted spoon, remove the sausage to a plate and set aside.

Tips:

  • Choose the right pasta: Bow-tie pasta is a great choice for this recipe because it holds the sauce well and is sturdy enough to withstand the cooking process.
  • Cook the pasta al dente: This means cooking it until it is tender but still has a slight bite to it. Overcooked pasta will be mushy and won't hold the sauce as well.
  • Brown the sausage: Browning the sausage adds flavor and depth to the dish. Be sure to cook it over medium heat so that it doesn't burn.
  • Use fresh asparagus: Fresh asparagus is best for this recipe, but you can also use frozen asparagus if you don't have any fresh on hand.
  • Add the asparagus at the end of cooking: This will help to preserve its鮮嫩and bright green color.
  • Season the dish to taste: Be sure to taste the dish before serving and adjust the seasoning as needed.

Conclusion:

This bow-tie pasta with sausage and asparagus is a quick and easy meal that is perfect for a busy weeknight. It is also a great way to use up leftover sausage and asparagus. The combination of flavors and textures in this dish is sure to please everyone at the table.
