Provided by rossboys

Number Of Ingredients 10

■ 2 cups heavy whipping cream
■ 1 package (5.2 ounces) Boursin cheese with black pepper
■ 2 tablespoons minced shallots
■ 2 garlic cloves, peeled, crushed
■ 2 teaspoons olive oil
■ 2 1/2 to 3 pounds Yukon gold or red-skinned potatoes, peeled and sliced 1⁄3-inch thick
■ Salt and freshly ground black pepper
■ 2 tablespoons minced fresh chives, divided
■ 1/2 cup (2 ounces) shredded Parmesan cheese, optional
■ 2 tablespoons chopped fresh parsley, optional

Steps:

  • Preheat the oven to 400 degrees. In a saucepan, place the cream, Boursin, shallots and garlic and heat over low heat. Cook, stirring, until the Boursin melts and the mixture thickens slightly, about 5 minutes. Meanwhile, brush a 13-by-9-inch baking dish with the olive oil. Arrange half of the potato slices in the dish, overlapping as needed. Season the potatoes with salt and pepper and sprinkle with 1 tablespoon chives. Pour half of the Boursin mixture over the potatoes. Arrange the remaining potato slices on top, season with salt and pepper and scatter remaining 1 tablespoon chives over them. Pour the remaining Boursin mixture over the potatoes. Scatter the Parmesan cheese over the top, if desired. Bake the gratin, uncovered, until it is deeply browned and the potatoes are tender, 45 to 50 minutes. You can serve the gratin at once, garnished with chopped parsley, or let it rest 15 to 20 minutes before serving.

POTATO GRATIN WITH BOURSIN

Number Of Ingredients 4

2 cups Whipping Cream
5 oz. pkg Boursin Cheese with herbs
3 lbs new red potatoes, unpeeled, scrubbed, thinly sliced
1 1/2 Tsb Chopped fresh parsley

Steps:

  • Preheat oven to 400°. Butter 9x13" baking dish with 2" high sides. Stir Boursin cheese and whipping cream in large heavy sauce pan until cheese melts and mixture is smooth. Arrange half of the potatoes in baking dish in slightly overlapping rows. Generously season potatoes in dish with salt and pepper. Pour half of cheese mixture over. Arrange remaining potatoes in slightly overlapping rows atop potatoes in dish. Generously season with salt and pepper. Pour remaining cheese mixture over potatoes. Bake until top is golden brown and potatoes are tender when pierced with a knife, about 1 hour and 15 minutes. Sprinkle with chopped fresh parsley and serve.

Tips:

  • To achieve a crispy potato gratin, ensure that the potatoes are thinly sliced. Using a mandoline or sharp knife can help achieve uniform, thin slices.
  • For a creamy sauce, use high-quality cream. Full-fat cream or heavy cream will provide a rich and indulgent texture, while low-fat or skim cream may result in a thinner sauce.
  • Adding some grated Parmesan cheese to the sauce enhances its flavor and adds a golden brown crust to the gratin.
  • Fresh herbs, such as thyme or rosemary, can be added to the sauce for an extra layer of flavor.
  • To prevent the gratin from drying out, cover it with aluminum foil during the initial baking stage. Uncover it for the last 15 minutes to allow the top to brown.
  • Allow the gratin to rest for a few minutes before serving. This helps it set and makes it easier to slice.

Conclusion:

Boursin potato gratin is a delicious and versatile dish perfect for any occasion. Its creamy, cheesy sauce, crispy potato slices, and herb-infused flavor make it a crowd-pleaser.
