This recipe is from Anthony Bourdain's Les Halles Cookbook. I have yet to try it but it looks fantastic. Sub veg or mushroom stock to make this vegetarian.

6 tablespoons butter
1 onion, thinly sliced
12 ounces button mushrooms, halved
4 cups chicken stock
1 sprig parsley
2 ounces sherry wine
salt and pepper

Steps:

  • Over medium heat, melt two tablespoons of the butter in a saucepan. Toss in the onion and cook until soft but not browned.
  • Toss in the remaining butter and then add the mushrooms. Cook for 8 minutes.
  • Pour in the chicken stock, add the parsley, and bring to a boil. When bubbling, reduce to a simmer and cook for an hour.
  • Pour soup into a blender (you might need to do this in stages), and process until smooth. Return to the saucepan and bring to a simmer. Pour in the sherry, and season with salt and pepper.

4 boneless, skinless chicken breasts
salt and pepper
1 tablespoon vegetable oil
1 cup cremini mushrooms
1 tablespoon butter
1 minced shallot
1/2 cup white wine
1/4 cup crumbled Boursin cheese (Garlic and Fine Herbs)
2 Tablespoons chopped parsley

Steps:

  • Dry your chicken breasts with paper towels and season well with salt and pepper. Flip them over and season the other side.
  • Cook the chicken in a large skillet on medium-high heat with the vegetable oil until brown on one side, about 5 minutes.
  • Flip over, reduce heat to medium and cover. Cook about 15 minutes more, or until the chicken reaches 160 degrees F. Transfer to a plate and cover with tin foil to keep warm. (If you used chicken with skin, pour out all but 1 Tablespoon of the fat).
  • Add the mushrooms and butter to the pan.
  • Add the shallot and cook until it begins to soften, about 1 minute.
  • Add the wine to the pan and scrape up all of the bits from the bottom of the pan. Cook until the wine cooks almost all of the way out.
  • Take the pan off of the heat and whisk in the Boursin cheese and parsley. Season with salt and pepper.
  • Pour the Boursin sauce over the chicken. Enjoy!

1 tablespoon unsalted butter
½ cup sliced fresh mushrooms
4 cloves garlic, minced
¼ cup heavy whipping cream
4 cups baby spinach
1 (5.2 ounce) package garlic and herb cheese spread (such as Boursin®)
¾ cup reserved pasta water

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes.
  • Meanwhile, melt butter in a heavy skillet over medium-high heat. Add sliced mushrooms and sauté until softened, about 3 minutes. Add garlic and sauté until fragrant, about 30 seconds. Reduce heat, and pour in cream.

1 -1 1/2 cup heavy cream

Steps:
