BOURBON CHICKEN

Bourbon Chicken image

A favorite named after Bourbon Street in New Orleans, Louisiana and for the bourbon whiskey ingredient; although this dish, sold as Cajun-style cuisine in malls all over America, is reported to be nothing of the kind (not genuine Creole or Cajun fare)! Note: If you double the recipe, make sure that the chicken is still in a single layer. Laissez les bons temps rouler!

STICKY MAPLE BOURBON CHICKEN

Sticky Maple Bourbon Chicken image

This recipe is a match made in heaven between bourbon, fresh thyme, and maple syrup. It's also a really cool method that is universal for preparing almost anything. The basic idea is that whatever is being cooked (pork, vegetables, or in this case, chicken) is made delicious and "sticky" by adding a sweetener to a pan sauce and then reducing it while dinner cooks in it.

Provided by Food Network

Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 7

1 tablespoon olive oil
4 (6-ounce) bone-in chicken breasts, skin removed
Salt and fresh ground black pepper
1 cup chicken stock
2 tablespoons maple syrup
1 shot bourbon
4 sprigs thyme

Steps:

  • Place a large heavy-bottom or cast-iron skillet over medium-high heat with the olive oil. Season the chicken liberally with salt and pepper. Add the chicken to the pan breast-side down and sear until deep golden brown, 4 to 5 minutes.
  • While the chicken in searing, in a small dish whisk together the stock, syrup, and bourbon. Add the bourbon mixture to the skillet along with the thyme sprigs and continue cooking, turning the chicken occasionally, until the meat is cooked through and the sauce has reduced to a thick syrupy consistency, 8 to 10 minutes. (If the sauce reduces to a syrupy consistency before the chicken has cooked through, add a few splashes of stock to the skillet and continue cooking.)
  • To serve, remove and discard the thyme sprigs. Spoon the sticky sauce over the chicken and enjoy warm.

Tips:

  • Prep ahead: To save time, you can marinate the chicken overnight in the refrigerator. This will help the flavors to penetrate the chicken and make it more juicy.
  • Use a cast-iron skillet: A cast-iron skillet is the best choice for this recipe because it heats evenly and retains heat well. This will help to create a nice sear on the chicken and prevent it from sticking.
  • Sear the chicken in batches: If you are cooking a large batch of chicken, it is best to sear it in batches. This will prevent the chicken from overcrowding the pan and ensure that it cooks evenly.
  • Use a meat thermometer: To ensure that the chicken is cooked through, use a meat thermometer to check the internal temperature. The chicken is done when it reaches an internal temperature of 165 degrees Fahrenheit.
  • Make sure the sauce is hot: Before serving, make sure the sauce is hot. You can do this by reheating it in a saucepan over medium heat.
  • Serve immediately: Bourbon mustard chicken is best served immediately after it is cooked. This will ensure that the chicken is juicy and the sauce is hot.

Conclusion:

Bourbon mustard chicken is a delicious and easy to make dish that is perfect for any occasion. The chicken is juicy and flavorful, and the sauce is rich and creamy. This dish is sure to be a hit with your family and friends.
