My aunt included this in a family cookbook several years ago and I'm not sure where the original recipe came from. This is a delicious way to prepare pork tenderloin. It can be served as an appetizer or a main dish. It always seems to show up on every buffet or appetizer table for family gatherings. Do not be afraid of the long cooking time--it comes out beautifully moist everytime.

2 -4 pork tenderloin
1/4 cup soy sauce
1/2 cup Bourbon
2 tablespoons brown sugar
1/3 cup sour cream
1/3 cup mayonnaise
1 tablespoon Dijon mustard
1 1/2 teaspoons red wine vinegar
1 tablespoon chopped green onion (to garnish)

Steps:

  • Mix together soy, bourbon, and brown sugar.
  • Place in zip lock bag or glass baking dish and add tenderloins.
  • Marinate 4-24 hours, turning occasionally.
  • Bake tenderloins for 1 1/2 hours at 300 degrees.
  • Remove from oven and let rest at least 10 minutes.
  • Mix mustard sauce ingredients together until well blended. (Sour cream through red wine vinegar).
  • Garnish with green onions.
  • For appetizers, slice thin and serve with timy dinner rolls or French bread slices and mustard sauce.
  • For dinner, slice thicker and serve with mustard sauce.

1/4 cup Worcestershire sauce

3 TBL brown sugar
2 TBL ground black pepper
1 tsp white pepper
1/2 tsp ground ginger
1 tsp salt

Steps:

  • Marinate tenderloin for 12 hours. Grill until pork reaches 170 degrees.

3/4 cup soy sauce
1/2 cup bourbon
1/4 cup Worcestershire sauce
1/4 cup water
1/4 cup canola oil
4 garlic cloves, minced
3 tablespoons brown sugar
2 tablespoons ground black pepper
1 teaspoon white pepper
1/2 teaspoon ground ginger
1 teaspoon salt
Garnish: fresh parsley sprigs

Steps:

  • Rinse tenderloins, and pat dry. Combine soy sauce and next 9 ingredients in a large zip-top plastic freezer bag or shallow dish; seal or cover, and chill at least 12 hours. Remove pork from marinade, discarding marinade. Sprinkle evenly with salt. Grill, covered with grill lid, over high heat (400° to 500°) 30 minutes or until a meat thermometer inserted into thickest portion registers 155°, turning occasionally. Remove from heat; cover with aluminum foil, and let stand 10 minutes or until thermometer registers 160°. Garnish, if desired. Note: For testing purposes only, we used Maker's Mark Kentucky Straight Bourbon Whisky.
