Maple Orange Bourbon Glazed Ham image

One 7- to 8-pound bone-in spiral cut ham
1 cup orange marmalade
1/2 cup bourbon
1/2 cup maple syrup
2 tablespoons unsalted butter
Pinch ground cinnamon
Pinch ground cloves
Nonstick cooking spray, for the foil

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the ham on a roasting rack in a roasting pan with the fat-side up. Use a small knife to lightly score the fat in a crosshatch pattern, taking care not to cut into the meat. Add about 1 cup of water to the bottom of the pan. Bake the ham for 45 minutes.
  • Meanwhile, make the glaze. Combine the marmalade, bourbon, maple syrup, butter, cinnamon and cloves in a small saucepan over medium-low heat. Cook, stirring often, until the glaze is thick and syrupy, 20 to 25 minutes.
  • Brush the ham with about half of the glaze and return to the oven. Roast, glazing the ham every 15 to 20 minutes, until the internal temperature reaches about 130 degrees F, 45 minutes to 1 hour more. (The ham will get very brown, but if the glaze starts to burn, tent with a piece of foil greased with cooking spray. Let rest, tented with a piece of greased foil, for about 10 minutes before carving.

⅓ cup bourbon whiskey
½ cup packed brown sugar
1 (8 ounce) can crushed pineapple in juice
½ cup honey
3 cloves garlic, minced
1 ½ cups water
1 (8 ounce) can pineapple rings

Steps:

  • Score the surface of the ham, making diamond shapes about 1/2-inch deep. Place the ham in a large, resealable bag. Add the bourbon, brown sugar, crushed pineapple, honey, and garlic to the bag; refrigerate at least 8 hours, turning the bag over several times while marinating.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Transfer the ham and marinade to a large baking dish; pour the water into the dish. Attach the pineapple rings around the surface of the ham with toothpicks.
  • Bake in preheated oven until the internal temperature reaches 165 degrees F (95 degrees C), basting occasionally with the sauce in the pan, 90 to 105 minutes.

10 pound Cooked Ham
1 cup Brown Sugar
1/2 cup Butter
1/2 cup Pecans
2 fluid ounce Bourbon
10 fluid ounce Apple Juice

Steps:

  • Remove Cooked Ham (10 pound) from cryovac packaging and place on wire rack inside full size steam pan with Apple Juice (8 fluid ounce) in bottom of pan.
  • Place in 250 degrees F (120 degrees C) smoker with a chunk of cherry and a chunk of hickory wood for smoke.
  • Cook ham to internal temperature of 130 degrees F (54 degrees C).
  • Melt Butter (1/4 cup) in small sauce pan over medium high heat. Add Brown Sugar (1 cup) and stir to melt. Add Bourbon (2 fluid ounce) to sugar mixture and continue to cook off alcohol until mixture is almost to a boil about 3-4 minutes.
  • Remove from heat and stir in Pecans (1/2 cup). Add remaining Butter (1/4 cup) and continue to stir until melted. Pour in remaining Apple Juice (2 fluid ounce) and stir. Mixture should have a syrup-like consistency.
  • Brush bourbon praline glaze over ham when internal temperature reaches 130 degrees F (54 degrees C). Continue to cook for 20 more minutes or until internal temperature reaches 140 degrees F (60 degrees C).
  • Rest the ham for 10-15 minutes and carve for serving. Serve and enjoy.

I made this for the first time on Easter and it was wonderful. THe ham was moist and juicy. I don't think I will make ham any other way. I left out the pecans because my family is not crazy about nuts. The recipe comes from Under the Magnolias -- A Tasteful Tour of Athens -- a junior league cookbook in my collection.

6 -8 lbs ham
1 1/2 cups Bourbon
2 tablespoons butter
1 cup maple syrup
1/2 cup brown sugar
1/2 cup finely chopped pecans
1/2 cup pecan halves

Steps:

  • Score the skin and fat of the ham and rub surface liberally with bourbon. Place in the smallest baking pan that will hold it and pour remaining bourbon over the top. Marinate 2-3 hours, basting every 30 minutes. Pour off excess bourbon and reserve. Bake ham, skin-side up, in 325º oven as directed on label.
  • Melt butter in saucepan. Stir in reserved bourbon, maple syrup, brown sugar and ground pecans. Bring to a boil and boil for 5 minutes, stirring occasionally. Brush glaze over ham several times during baking. Decorate with pecan halves and bake 15 to 20 minutes longer.
