MEAT LOAF

Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Provided by Ina Garten

Categories     main-dish

Time 1h25m

Yield 6 servings

Number Of Ingredients 12

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Time 1h35m

Yield 8 servings

Number Of Ingredients 15

1 cup milk
6 bread slices
2 pounds ground beef
1 cup grated Parmesan
1 teaspoon salt
Freshly ground black pepper
1/4 teaspoon seasoned salt, such as Lawry's
1/4 to 1/2 cup minced flat-leaf parsley
4 eggs, beaten
8 to 12 thin bacon slices
1/2 cup ketchup
6 tablespoons brown sugar
1 teaspoon dry mustard
Dash or 2 hot sauce (more if you like)
Dash or 2 Worcestershire sauce

Steps:

  • For the meatloaf: Preheat the oven to 350 degrees F.
  • Pour the milk over the bread and allow it to soak in for several minutes. Place the ground beef, milk-soaked bread, Parmesan, salt, some pepper, seasoned salt and parsley in a large mixing bowl. Pour in the eggs. With clean hands, mix the ingredients until well combined.
  • Form the mixture into a loaf shape on a foil-lined broiler pan, which will allow the fat from the meat to drain.
  • Lay the bacon slices over the top, tucking them underneath the meatloaf to give the meatloaf some support.
  • Next, make the tomato sauce: Pour the ketchup into a bowl. Add the brown sugar and dry mustard, and splash in the hot sauce and Worcestershire sauce. Stir the mixture until well combined. Pour one-third of the sauce over the top of the meatloaf.
  • Bake for 45 minutes, and then pour over another one-third of the remaining tomato sauce over the meatloaf. Bake for an additional 20 to 25 minutes; the meatloaf should be no longer pink in the middle. Allow to sit 10 minutes before serving.
  • Serve with the remaining tomato sauce on the side as a dipping sauce.

Time 2h10m

Yield 4 to 6 servings

Number Of Ingredients 12

1 1/2 cups ketchup
1 cup canned whole cranberry sauce
1/2 jalapeno or serrano, optional
2 tablespoons olive oil
1 yellow onion, finely diced
2 stalks celery, finely diced
3 cloves garlic, minced
2 pounds ground turkey
1 1/2 cups stuffing mix
2 large eggs, lightly beaten
Kosher salt and freshly ground black pepper
1 sweet potato, cut into 8 wedges, then halved again lengthwise into spears

Steps:

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
  • Combine the ketchup, cranberry sauce and jalapeno in a small saucepan over medium heat. Bring to a simmer and let cook, stirring occasionally, 2 to 3 minutes. Remove from the heat, then discard the chile and set aside.
  • Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the onion and celery and cook until both soften and start to become translucent, 3 to 4 minutes. Add the garlic and cook for another minute. Remove from the heat and allow to cool slightly.
  • Combine the turkey, stuffing mix, eggs, 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Add the onion mixture and 1 cup of the ketchup sauce and stir gently until just combined, making sure not to overmix.
  • Transfer the mixture to the prepared baking sheet and shape it into a loaf. Pour the remaining ketchup sauce over the loaf and spread so that the entire loaf is covered with sauce. Bake for 30 minutes.
  • Meanwhile, toss the sweet potatoes in a bowl with remaining tablespoon oil. Sprinkle with salt and pepper. Remove the meatloaf from the oven and scatter the wedges on the baking sheet around the meatloaf. Return to the oven and cook for another 45 minutes. Remove from the oven and let rest for 5 minutes, then slice and transfer to a serving platter. Surround with the baked sweet potatoes.

COUNTRY HARVEST MEATLOAF

Categories     Meatloafs

Number Of Ingredients 13

1 can(s) (16 oz) diced tomatoes
1 egg beaten
3 slice bread, cubed
1 1/2 lb ground beef
1/2 tsp pepper
1/2 tsp salt
1 tsp garlic salt
2 Tbsp mustard
2 Tbsp worcestershire sauce
1 small onion minced
1 c ketchup
1 c grated cheddar cheese
1 pkg lipton onion soup mix

Steps:

  • 1. Preheat oven to 350.
  • 2. Take ground beef and break up in medium bowl. Add all of the ingredients (only half of the ketchup) and fold together to make sure that all of the ingredients are even throughout the meat.
  • 3. Shape into the loaf form that you want and place in a 9x12 inch baking dish. Take the rest of the ketchup and spread evenly on top of the meatloaf. Cover with tin foil and place in the oven 1 hour. For the last 15 minutes, uncovered.

Tips:

  • Choose the right ground meat: For a moist and flavorful meatloaf, use a combination of ground beef and ground pork. You can also use all-beef or all-pork, but the combination of the two will give you the best results.
  • Season the meatloaf well: Don't be afraid to use a generous amount of salt and pepper, as well as other herbs and spices. Some good choices include garlic powder, onion powder, paprika, and chili powder.
  • Mix in some vegetables and bread crumbs: This will help to add moisture and texture to the meatloaf. Good choices include grated carrots, chopped celery, and panko bread crumbs.
  • Don't overmix the meatloaf: Overmixing will make the meatloaf tough. Mix the ingredients just until they are combined.
  • Bake the meatloaf at a high temperature for a short amount of time: This will help to create a nice crust on the outside while keeping the inside moist.
  • Let the meatloaf rest before slicing: This will help to keep the juices from running out when you slice it.

Conclusion:

Meatloaf is a classic comfort food that is easy to make and can be enjoyed by people of all ages. With a few simple tips, you can make a delicious and moist meatloaf that will be a hit at your next meal. So next time you're looking for a hearty and satisfying meal, give meatloaf a try.
