KIKI'S BORRACHO (DRUNKEN) BEANS

Kiki's Borracho (Drunken) Beans image

Growing up, my Mexican grandmother always had a pot of beans cooking on the stove. I often cook these beans (a 'drunken' version) for my family, and the aroma keeps her close to my soul, even years after she has past. I hope your family enjoys them as much as mine.

Time 3h30m

Yield 12

Number Of Ingredients 12

1 pound dried pinto beans, washed
2 quarts chicken stock
1 tablespoon salt
½ tablespoon ground black pepper
1 (12 fluid ounce) can or bottle dark beer
2 (14.5 ounce) cans chopped stewed tomatoes
1 white onion, diced
¼ cup pickled jalapeno peppers
6 cloves garlic, chopped
3 bay leaves
1 ½ tablespoons dried oregano
1 ½ cups chopped fresh cilantro

ONE-POT TEXAS BORRACHO BEANS

Time 50m

Yield 6

Number Of Ingredients 12

6 ounces bacon, roughly chopped
1 yellow onion, chopped

½ teaspoon garlic powder
¼ teaspoon ground dried chipotle pepper

EASY AND DELICIOUS BORRACHO BEANS

Easy and Delicious Borracho Beans image

I wanted Borracho Beans as a side dish but didn't want to make the beans from a dried state. This recipe uses canned beans but it is so good you wouldn't know it! You can't really substitute the beer in this recipe because Borracho Beans means "drunken" and without the beer... well they just wouldn't be Borracho Beans! Also, these beans are intended to be "soupy" so if you like your beans with a thicker sauce (like me!), either use 1/2 the beer or simmer the beans longer (this is what I do).

Provided by Sooz Cooks

Categories     Beans

Time 40m

Yield 8 serving(s)

Number Of Ingredients 10

4 slices bacon, diced
1/4 onion, chopped
2 (16 ounce) cans pinto beans (undrained)
1 (10 ounce) can Ro-Tel tomatoes (undrained)
1 (4 ounce) can diced green chilies (undrained)
1 teaspoon minced fresh garlic (or use garlic powder to taste)
1 (12 ounce) bottle mexican beer (use only 1/2 bottle for thicker beans)
1/4 cup fresh cilantro leaves
lime wedge
shredded cheese

Steps:

  • In a medium sized sauce pan, fry bacon and onion until the bacon is crisp (stirring often to make sure onion doesn't burn).
  • add pinto beans, ro-tel tomatoes, chilies, garlic and beer to the pot.
  • Bring to a boil, reduce heat to medium-low and simmer uncovered for about 20 minutes or until the sauce is to your desired thickness (if you have longer, it's better!).
  • Stir in cilantro and garnich with lime or cheese or both!

JEN'S CHEATER BORRACHO PINTO BEANS

Jen's Cheater Borracho Pinto Beans image

Here is my secret recipe! I was in a hurry to make beans one day and discovered if you rinse the canned pinto beans in hot water and add to the other ingredients, it did not taste much different that the old fashioned soaking method. This is also the non-alcoholic version of borracho beans. I am sure that you can sub a beer for some of the water and it would taste good too. All amounts are a guestimation.

Time 45m

Yield 10-15 serving(s)

Number Of Ingredients 8

1 onion, diced
4 slices bacon, cut into small pieces (I use Wright's)
2 garlic cloves, minced
1 can rotel tomatoes and green chilies, original, do NOT drain

2 -4 tablespoons fiesta brand pinto bean seasoning, season to taste
2 tablespoons chopped cilantro
water

Steps:

  • Cook bacon & onion together in large pot. Do not add oil.
  • When bacon and onion are almost done, stir in garlic. Do not drain bacon grease!

  • Cook on low until ready to serve.

BORRACHO BEANS AND RICE

Borracho Beans and Rice image

I bought a can of cattle beans and a very similar recipe was on the label. I embellished it a bit. Normally, bacon goes into burracho beans. I happened to have some Mexican chorizo and used that instead. If you don't want your "drunken" beans drunk, use chicken broth instead. (But, it's better with beer!)

Time 50m

Number Of Ingredients 17

pan spray
4 oz chorizo (mexican kind, can use soy)
1/2 c red onion, chopped
1/2 c poblano pepper, seeded and chopped
1-2 clove garlic, grated or minced
1 can(s) pinto, black or cattle beans, rinsed and drained
1/2 tsp cumin
1 tsp ground red chili -medium heat, or to taste
1/2 tsp dried oregano (use more if fresh)
12 oz beer, lager style dark or light
1 can(s) tomatoes with chiles (rotel or similar)
1/4 c cilantro, chopped
salt and pepper, to taste
1 Tbsp real bacon bits, for garnish
1 green onion, chopped, for garnish
2 Tbsp cojita cheese, or feta, mexican blend, etc.
1 - 2 c brown or white rice, cooked

Steps:

  • 1. Spray large skillet with olive oil or Pam. Add chorizo, break up and cook on medium-high.
  • 2. Add onions and peppers while continuing to stir and break up until it starts to brown. Add garlic, cumin, ground chili and oregano. Cook for another minute or two. Don't let the garlic burn.
  • 3. Add drained beans, can of tomatoes with chiles, and beer. (If it seems like too much beer, only pour in half and drink the rest!) Simmer together for about 20 minutes.
  • 4. Add cilantro and cook for another 5-10 minutes. Taste for salt and pepper.
  • 5. When serving, add a scoop of rice to the bottom of each bowl. Add beans and sprinkle on some bacon bits, cojita cheese crumbles and scatter chopped green onion on each bowl.

BORRACHO BEANS OR DRUNKEN BEAN SOUP

Borracho Beans or Drunken Bean Soup image

This is a very quick and very tasty short cut to borracho bean soup. Makes a filling meal for two and is easily doubled or tripled. If you don't like spicy get the can of pintos without jalapenos and then add only one or two jalapenos without the seeds. We love spicy so we kick it up all the way. We love this soup with cheese quesadillas and homemade flour tortillas. Yum!

MEXICAN DRUNK BEANS (BORRACHO BEANS)

Mexican Drunk Beans (Borracho Beans) image

This can be used as a main dish, a side dish or soup. Great for football parties and big get togethers. Not the most healthy of dishes, but bacon makes every thing better, and there is a lot. This recipe I made simple and I am giving you the larger version, but it can be broken down easily into smaller portions.

Provided by Tracy Allen

Categories     Other Main Dishes

Time 5h

Number Of Ingredients 5

4 lb bacon
16 can(s) pinto beans
8 large tomatoes (diced)
4 bunch cilantro/coriander
4 medium red onions

Steps:

  • 1. Using a good sharp knife or awesome pair of kitchen sheers, cut the bacon up into bite size or one inch pieces. Place into large stock pot and fry completely. It is okay if it is not crispy all over.
  • 2. Chop all the onion and add to the bacon about halfway through the bacon frying.
  • 3. Once the bacon and onion is finished add the cilantro, well chopped. Stir and mix well for about five minutes on a medium heat. Add the Tomatoes (blended or diced, based on preference) and simmer for about 30 minutes. If you wish a more soupy meal than add more tomatoes, again based on preference.
  • 4. Lastly, add the beans and simmer on low for as long as you wish. I have eaten the beans as soon as 30 minutes or as long as 3 hours from preparation. If you are good at measuring beans and quantities, dried beans may be used.
  • 5. I like to eat the soup using the scoops chips. Again, this may be used as a side or as a main meal. Notice how all ingredients are in even quantities and can be broken down to a small family meal or large gatherings.

Tips:

  • For the best flavor, use dried beans that have been soaked overnight.
  • If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Be sure to rinse the beans thoroughly before cooking them.
  • Use a large pot to cook the beans, as they will expand as they cook.
  • Add plenty of liquid to the pot, as the beans will absorb a lot of it.
  • Season the beans with salt, pepper, and other spices to taste.
  • Cook the beans over low heat for at least 1 hour, or until they are tender.
  • Once the beans are cooked, remove them from the heat and let them cool slightly before serving.

Conclusion:

Borracho beans are a delicious and easy-to-make dish that is perfect for any occasion. They are a great source of protein and fiber, and they can be served as a main course or a side dish. With a few simple ingredients and a little bit of time, you can make a delicious pot of borracho beans that your family and friends will love.
