Yield Makes 2 servings

Number Of Ingredients 5

1 navel orange
3 tablespoons sugar
3 tablespoons unsalted butter
1 large egg
1/2 cup well-chilled heavy cream

Steps:

  • With a vegetable peeler remove 2 strips zest from orange (each about 3 by 1/2 inch) and mince.
  • Squeeze enough juice from orange to measure 1/2 cup and in a small heavy saucepan simmer orange juice until reduced to 1/4 cup.
  • Remove pan from heat and add sugar and butter to orange juice, whisking until butter is melted. Whisk in egg until combined well and cook mixture over moderately low heat, whisking, until thick enough to hold marks of whisk and first bubble appears on surface, 3 to 5 minutes.
  • Remove pan from heat and add zest to orange curd, whisking. Pour orange curd into a bowl set in a larger bowl of ice and cold water and stir until cold.
  • In another bowl beat cream until it just holds stiff peaks and fold into orange curd gently but thoroughly.
  • Spoon orange fool into 2 chilled goblets.

Tips:

  • Use fresh oranges. Fresh oranges will give your orange fool a brighter flavor and a more vibrant color.
  • Zest your oranges before juicing them. The zest of an orange contains a lot of flavor, so be sure to zest your oranges before you juice them to get the most flavor out of your fool.
  • Use a fine-mesh sieve. When straining the orange juice and zest mixture, use a fine-mesh sieve to remove any solids. This will give your fool a smooth and creamy texture.
  • Chill your mixture before whipping. Chilling the orange juice and zest mixture before whipping it will help it to whip up more easily and give your fool a lighter and fluffier texture.
  • Whip the cream until stiff peaks form. When whipping the cream, whip it until stiff peaks form. This will help to stabilize the fool and give it a thick and creamy texture.
  • Fold the whipped cream into the orange mixture gently. When folding the whipped cream into the orange mixture, be gentle so that you don't deflate the whipped cream. Fold until just combined.
  • Chill the fool before serving. After you've made the fool, chill it in the refrigerator for at least 2 hours before serving. This will help the flavors to meld and give the fool a chance to set.

Conclusion:

Orange fool is a classic dessert that is easy to make and always a crowd-pleaser. With its light and fluffy texture, bright citrus flavor, and creamy richness, it's the perfect dessert for any occasion. Whether you're serving it at a dinner party or enjoying it as a special treat, orange fool is sure to be a hit.
