Delicious, easy and healthy to make! We have this meal at least twice a month! A big hit with company and the kids! We have the kiddos use Ranch and honey mustard as their dip.

Provided by Eager2Learn2

Categories     High Protein

Time 55m

Yield 4 serving(s)

Number Of Ingredients 10

2 lbs boneless chicken breasts, in cubes about 1 1/2 inches wide
4 eggs
1/2 cup flour
1 -2 cup plain breadcrumbs
1/2 cup milk
salt
pepper
garlic powder
red cayenne pepper
buffalo wing sauce

Steps:

  • Prepare an oven pan (cookie sheet should work) with non-stick cooking spray.
  • Preheat oven to 400 degrees Fahrenheit.
  • Set aside 2 medium-sized mixing bowls.
  • Prepare 1 large plate or shallow pan with enough bread crumbs to coat the surface. If using plain or homemade breadcrumbs, add salt, pepper, garlic powder, and a couple of shakes of cayenne pepper to taste; keep breadcrumbs off to the side, you may need more.
  • Add cut up chicken cubes into one of the medium-size mixing bowls, pour milk over chicken, just enough to cover the chicken; you do not need more than this. Set bowl aside for later.
  • Add flour into the other mixing bowl. Dip chicken into flour, coating entirely. You may need to add flour as you go.
  • Add eggs to the milk mixing bowl used earlier; if there is some leftover milk just mix with eggs.
  • Dip about 5 or 6 cubes of chicken at a time in egg mixture.
  • Coat all sides of the chicken in the breadcrumb plate.
  • Add to prepared oven pan.
  • Once all the chicken is added to pan, spray the top with the cooking oil (we use olive oil spray). Season with more salt and pepper, just enough to taste.
  • Put in oven and cook for 20 minutes.
  • Turn pieces of chicken over, spray again with cooking spray, season with salt, pepper, and garlic powder to taste.
  • Cook for an additional 15 minutes.
  • Drizzle the wing sauces of your liking over chicken! Enjoy!

BONNIE'S WINGS AND DRUMS-- TWO RECIPES!

BONNIE'S WINGS AND DRUMS-- TWO RECIPES! image

My Dad can eat these delicious baked wings 7 days a week. They are his very favorite part of the chicken. They are healthy, and easy to prepare. I brine them first, so they are plump, tender, and luscious, and bake them with just a hint of heat from chili powder. I hope you will Enjoy them, too. Photo and recipe is my own.

Categories     Poultry Appetizers

Time 1h25m

Number Of Ingredients 10

2 recipes in 1
10 to 16 wings or drumsticks (tips removed from wings)
6 tablespoons olive oil
2 to 3 tablespoons gebhardt's chili powder--more for fire breathing hot!
2 teaspoons garlic powder
salt and pepper to taste
mccormick seasoning to taste
my brine recipe is below:

Steps:

  • 1. COOK'S TIP: This recipe is actually 2 recipes in 1. If you omit the McCormick seasoning, and increase the chili powder by 1 to 2 tablespoons, you have delicious buffalo-style wings. Serve with blue cheese dressing and carrot and celery sticks. Or make them with the McCormick seasoning and serve with mashed potatoes and a salad. You can also serve BOTH recipes on one platter for a variety for everyone. Two great dinners in one recipe!
  • 2. BRINE THE WINGS OR DRUMSTICKS: Brine: Take a one gallon pot of cold water, add 1/2 cup of kosher salt, stir until the salt has disolved. (Do not use iodized salt.) Submerge the chicken pieces in the brine water. Refrigerate. Brine for no more than 2 hours, then remove the chicken pieces, rinse them and put them in the refrigerator until it is time to cook the chicken. Discard the brine.
  • 3. MIX THE INGREDIENTS IN A BAG: Add chili powder, garlic powder, and olive oil to the bag, knead the bag gently to mix.
  • 4. COAT THE CHICKEN: Add the brined chicken, pat dry, a few pieces at a time to the bag, kneading until coated, gradually adding all the chicken, and with the air out of the ziplock bag, you should be able to knead and coat the chicken thoroughly.
  • 5. PREHEAT THE OVEN: pre-heat the oven to 375 degrees. Line a cookie sheet (with a lip) with tin foil for easy clean-up. Spray with Pam.
  • 6. BAKING THE CHICKEN: Place the coated wings (and drumsticks if you are having them) on the cookie sheet skin side down. Salt and pepper the wings, and sprinkle McCormick chicken season liberally over the wings. Bake 1 hour in the oven, TURNING the chicken after 35 minutes, or until brown on the underside. Once you have turned the chicken, sprinkle lightly with salt and pepper and the McCormick chicken seasoning. Finish baking 30 to 40 more minutes until done and nice and brown.

Tips:

  • Choose the right wings: For the best results, use fresh, plump chicken wings. Avoid wings that are frozen or have been previously frozen.
  • Dry the wings thoroughly: Before you season or cook the wings, make sure they are completely dry. This will help the seasoning stick and the wings will crisp up better.
  • Season the wings generously: Don't be afraid to use a lot of seasoning on the wings. This is what will give them their flavor. You can use a store-bought seasoning mix or make your own.
  • Cook the wings at a high temperature: This will help the wings to crisp up and brown. You can cook them in the oven or on the grill.
  • Don't overcrowd the wings: When you are cooking the wings, make sure they are not overcrowded in the pan or on the grill. This will prevent them from cooking evenly.
  • Serve the wings with your favorite dipping sauce: There are many different dipping sauces that you can serve with chicken wings. Some popular choices include ranch dressing, blue cheese dressing, and barbecue sauce.

Conclusion:

Chicken wings are a delicious and versatile appetizer or main course. They can be cooked in a variety of ways, and they are always a crowd-pleaser. If you are looking for a new way to cook chicken wings, be sure to try one of the recipes in this article. You won't be disappointed!
