2 chickens (2 1/2 to 3 pounds each), quartered, with backs removed
1 recipe Barbecue Sauce, recipe follows
1 1/2 cups chopped yellow onion (1 large onion)
1 tablespoon minced garlic (3 cloves)
1/2 cup vegetable oil
1 cup tomato paste (10 ounces)
1 cup cider vinegar
1 cup honey
1/2 cup Worcestershire sauce
1 cup Dijon mustard
1/2 cup soy sauce
1 cup hoisin sauce
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 tablespoon crushed red pepper flakes

Steps:

  • Marinate the chickens in 2/3 of the barbecue sauce for a few hours or overnight in the refrigerator.
  • Heat the coals in a charcoal grill. Spread the bottom of the grill with a single layer of hot coals and then add a few more coals 5 minutes before cooking, which will keep the fire going longer. Place the chicken quarters on the grill, skin side down, and cook for about 45 minutes, turning once or twice to cook evenly on both sides. Brush with the marinade as needed. The chicken quarters are done when you insert a knife between a leg and thigh and the juices run clear. Discard any unused marinade.
  • Serve with extra barbecue sauce on the side.
  • In a large saucepan on low heat, saute the onions and garlic with the vegetable oil for 10 to 15 minutes, until the onions are translucent but not browned. Add the tomato paste, vinegar, honey, Worcestershire sauce, mustard, soy sauce, hoisin sauce, chili powder, cumin, and red pepper flakes. Simmer uncovered on low heat for 30 minutes. Use immediately or store in the refrigerator.
  • Yield: 1 1/2 quarts

My family loves this delicious barbecued chicken, and it took a few years to get the recipe tweaked just right. Simple seasonings and a winning cooking technique combine to make this the richest, most succulent and tender, barbecued chicken you will ever eat! I am happy to share my recipe with you. Enjoy!

2 chickens, skin removed and cut into serving pieces.
1 28 ounce bottle of masterpiece honey barbecue sauce
1/2 cup of whiskey
1/4 cup dark brown sugar
2 tablespoons garlic powder
1 teaspoon black pepper
1 1/2 cups of flour for dredging
olive oil for frying

Steps:

  • 1. Brine: Take a one gallon pot of cold water, add 1/2 cup of kosher salt, stir until the salt has disolved. (Do not use iodized salt.) Submerge the chicken pieces in the brine water. Refrigerate. Brine for no more than 2 hours, then remove the chicken pieces, rinse them and put them in the refrigerator until it is time to cook the chicken. You can do the brining in the morning and the cooking in the evening if you wish. Discard the brine.
  • 2. Select a baking pan just large enough to hold all the chicken pieces, and line it with foil and spray it with Pam. Preheat the oven to 410 degrees. Place a flat pan on the bottom rack with about 1 inch of water. This pan will be below your chicken which is on the middle rack in the oven.
  • 3. Season the brined chicken pieces with a sprinkle of pepper and garlic powder on both sides and dredge in the flour. Pre-heat a large non-stick skillet with some olive oil and fry the chicken until golden brown. As each piece browns, place it in the foil-lined baking pan.
  • 4. Empty the entire bottle of barbecue sauce in a small mixing bowl. Add the whiskey and brown sugar and mix well. Spoon the sauce with a large tablespoon over the chicken until all pieces are covered.
  • 5. Bake the chicken in the 410 degree oven for 15 minutes, then remove from the oven and turn the pieces over and spoon sauce over the chicken and return to the oven and bake 15 minutes more. Let chicken rest 5 minutes in the oven before you serve it.
  • 6. Cook's Tip: Every oven is different. So watch the chicken closely the first time you make it. It is a very forgiving recipe and you can tweak this dish to your individual taste very easily. I would suggest you make it as written the first time, then tweak away if you feel the need. The pre-frying technique seals in the juices and makes the sauce stick to the skinless chicken. The pan of water, and the brining is a must do if you want, tender, juicy chicken. Enjoy!

6 lbs chicken pieces
1 teaspoon salt
1/4 teaspoon curry powder (I always add more)
2 teaspoons black pepper
1/2 cup flour
1/4 cup whole wheat flour
1 tablespoon cornmeal
1 teaspoon dry mustard
oil (for frying)

Steps:

  • Soak chicken in cold salted water for an hour.
  • Remove and pat dry.
  • Combine all ingredients in a bowl or bag.
  • Toss in chicken and coat well.
  • Put about an inch of oil in heavy pan .
  • fry chicken for about 10 minutes on each side to brown.

CHICKEN
8 boneless chicken thighs, skinless
3 tablespoons butter
salt and pepper to taste
SAUCE
1 can tomato soup, undiluted
1/8 teaspoon basil
1/8 teaspoon leaf thyme
6 drops tobasco sauce
2 tablespoons worcestershire sauce
1 tablespoon minced garlic
1/2 large onion, chopped fine
2 tablespoons brown sugar
3 tablespoons white wine vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • 1. I use a small electric skillet for 8 thighs, and the larger one holds 14 thighs. (Double the sauce and use one whole onion for 14 thighs)
  • 2. Chop one half of an onion. Set aside
  • 3. Wash the chicken, remove the skin and bones. Pat dry, and sprinkle with salt and pepper on both sides. Melt butter in the electric skillet on 350. Make sure it isn't too hot as temperatures can vary on some skillets. Add the chicken pieces to the melted butter, and fry on both sides until golden brown.
  • 4. When the chicken is done, push a few pieces to the side in the pan, and add the chopped onions. Stir them a few times and cook them until they are half done.
  • 5. Combine the ingredients for the sauce and mix well. Pour the sauce over the chicken. Add the lid, turn the heat to as low as possible and simmer for 30 minutes. Stir several times. Keep the lid on. Turn off the heat while you get the rest of the dinner together, turning the heat back on for about 4 minutes before serving. Drizzle the juices over the rice.
