- In a large bowl, combine the bread crumbs, eggs, tomato juice, parsley, garlic, oregano, salt and pepper. Crumble beef over the mixture and mix well. , On a pieces of heavy-duty foil, pat meat mixture into a 12x10-in. rectangle. Place the ham and shredded cheese on loaf to within 1/2 in. of edges. Roll up, jelly-roll style, beginning with the short end and peeling foil away while rolling. , Place on a greased baking pan with seam side down; seal ends. Bake, uncovered, at 350° for 1 hour and 10 minutes or until meat is no longer pink and a thermometer reaches 160°. Top with sliced cheese; bake 5 minutes longer or until cheese is melted.

- In a large bowl, combine eggs and tomato juice. Stir in the bread crumbs, parsley, oregano, salt, pepper, garlic and ground beef. Mix thoroughly. Preheat oven to 350 degrees F (175 degrees C).
- On a piece of foil or waxed paper, pat and shape meat into a 10x8 inch rectangle. Arrange ham slices on top of meat, leaving a small margin around edges. Tear up the cheese slices, reserving 1 slice whole, and sprinkle over the ham.
- Starting from the short end, carefully roll up meat, using the foil or waxed paper to lift. Seal the edges and ends of the meat. Place roll, seam side down, in a 9x13 inch baking dish.
- Bake in a preheated oven for about 75 minutes. Cut the reserved slice of cheese into 4 triangles. Overlap the triangles on top of loaf. Bake for another 2 minutes or until cheese melts.

BONNIE'S SICILIAN MEAT ROLL
This is a fancy looking meat roll that is definitely company worthy. Lots of flavor and a hidden surprise of creamy swiss cheese, colorful vegetables, and boiled ham inside the roll. Enjoy! The photo is my own, adapted from a recipe by Betty Jones.

Steps:
- 1. Saute the red pepper half done, add the spinach and stir for one minute and remove and set aside.
- 2. In a small mixing bowl, combine the bread crumbs, eggs, tomato juice, parsley, oregano, pepper, garlic and onion soup mix. Add the ground beef, mix well.
- 3. Take a sheet of wax paper large enough to shape the meat into a 12 by 10 inch rectangle. (I measure it with a ruler)
- 4. Add the slices of boiled ham on top of the meat, leaving a small gap around the edges for sealing.
- 5. Add the swiss cheese, spinach and red pepper mixture to the ham. Spread it evenly.
- 6. Using the wax paper, roll the meat from the narrow side, (the wax paper makes a perfect roll) and seal the edges and the ends of the meat roll and discard the wax paper as you form the roll. Then place the roll SEAM SIDE DOWN in a greased 9x13 baking dish. It will just fit if you have measured it.
- 7. Bake in a 350 degree oven for one hour or until done. (The center of the roll will be pink due to the ham) Remove from oven, and cut the slices of swiss cheese at an angle, like my photo, and place them overlapping on top of the meat roll. Return to the oven for 5 minutes or until melted.

This is a lightened version of a meatloaf called a Sicilian Meat Roll. It is topped with cheese instead of sauce, but is very well seasoned. My family loves this version but I misplaced my recipe so we haven't had it for awhile. Thought I better post it on here for safe keeping!

- In a large bowl, combine the egg substitute, ketchup, Italian seasoning, garlic, seasoned salt, and parsley, mixing well.
- Process bread into crumbs; add to mixture.
- Crumble sirloin over mixture; combine completely.
- On a piece of heavy duty aluminum foil, press meat into a rectangle.
- Evenly place ham over meat to within 1 inch of edge.
- Sprinkle 3/4 cup mozzarella over ham.
- Roll jellyroll style, removing foil as you roll.
- Seal all edges completely.
- Bake, uncovered, seam side down at 350°F for 1 hour.
- Sprinkle with remaining 3/4 cup mozzarella.
- Bake 5-10 minutes longer or until cheese is melted.

Seasoned meatloaf stuffed with ham and cheese. This is based on a recipe from Better Homes and Gardens All-Time Favorite Recipes. Our version uses Canadian bacon instead of the ham, and changes a few other things around to suit our taste.

- Preheat oven to 350°F.
- Combine egg, crumbs, herbs, salt and pepper in a large bowl.
- Add beef and mix well.
- Place mixture on a large piece of foil or waxed paper and pat into a 10"x8" rectangle.
- Arrange Canadian bacon slices over beef mixture, leaving a small margin at edges.
- Set aside 2 slices of cheese.
- Tear remaining cheese into smaller pieces and sprinkle over Canadian bacon.
