- Either scrub the sweet potatoes clean and pat dry, or peel them (I generally peel mine). To slice, use a sharp chef's knife to cut them into 1-inch thick rounds. Then, cut up each round to make 1-inch cubes. The "cubes" won't be perfectly even, but that's ok.
- Place the sweet potatoes on the prepared baking sheet. Drizzle the olive oil on top. If using, sprinkle the chili pepper or several twists of freshly ground black pepper on top, followed by the salt. Toss until the sweet potatoes are all evenly coated in oil, and arrange them in a single layer.
- Bake for 30 to 40 minutes, tossing halfway, until the sweet potatoes are tender and caramelizing at the edges. Serve while warm. Leftover sweet potatoes will keep in the refrigerator, covered, for about 4 days. Gently reheat in the microwave or oven if desired.

- Combine potatoes and onions.
- Mix together butter and spices, drizzle over potatoes and onions.
- Toss to coat.
- In a 2 quart oval with flat bottom (or something similar) dish spread half the potatoe mixture top with half the cheese repeat one more time.
- Bake 40-45 mins in 400 degree oven uncovered.
- *I did not have any pepper jack cheese but did have some peppers and jack cheese so i chopped up the peppers grated the jack cheese and subbed this for pepper jack cheese.

- 1. Preheat the oven to 400 degrees. Scrub but don't peel the potatoes. Cut the potatoes into quarters lengthwise. Slice each quarter into pieces about two inches long. Put the slices in a Ziploc bag with the seasonings. Add the sweet potatoes and the oil. "Knead" the bag until the oil and seasonings coat the potatoes, then place them on a greased baking pan with a rim. Roast the potatoes at 400 degrees for 25 minutes, turning halfway through.
- 2. About ten minutes before the end of the baking time, core the pears and quarter them and slice them in half. Drizzle pears with 1 tablespoon oil, and add them to the potatoes and toss. Cook 10 minutes more and serve.
