MIX TOGETHER:
1 c oil
2 c sugar
3 eggs
1 tsp vanilla extract
SIFT TOGETHER AND ADD:
3 c all purpose flour
1 1/4 tsp baking soda
1/2 tsp nutmeg
1/2 tsp cloves
1 tsp cinnamon
1 tsp salt
STIR IN:
3 c apples (cut fine)
1 c chopped nuts

Steps:

  • 1. Grease and flour bundt or angel food cake pan.
  • 2. Add batter (will be a little thick) and bake at 350* for 1 hour.
  • 3. Cool in pan about 15 minutes. Remove and wrap in foil till cold. Yummy!!! :)

This recipe comes from one of my Mom's friends. This lemon cake is Rich and moist and will not let you down. There is a reason for packaged cake mixes and this is it!!!! When cake cooled I added thicker confectioners glaze upon my husbands request.

1 box lemon cake mix
1 box lemon jello instant pudding, 3-1/2 ounce box
1/4 c lemon juice
1/2 tsp lemon extract
2/3 c canola oil
glaze
1/4 c lemon juice
1 tsp grated lemon zest
1/2 tsp lemon extract
1 c confectioners' sugar
4 eggs

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In the bowl of electric mixer, add the cake mixture and instant pudding and set side.
  • 3. In a measuring cup, add the lemon juice and enough cold water to make 2/3 cup. Add the eggs, lemon water, and lemon extract to the dry ingredients and combine. Pour in the oil, and beat at medium speed for 6 minutes or until smooth.
  • 4. Lightly oil bundt pan, pour in the mixture, and bake for 45 minutes or until the top is golden and cake is springy to the touch. While the cake is baking, prepare the glaze. In a small bowl, whisk the lemon lemon juice, zest, lemon extract, and confectioners until smooth. Set aside.
  • 5. When the cake is done, cool down for 5 minutes, invert and unmold. Using a poultry needle or toothpick, pierce the top of the cake with 1-inch deep holes. Spoon the glaze over the cake and cool. Serve with fresh berries. Serve 10

3 c all-purpose flour
3 c apples
2 c sugar
1 tsp cinnamon
1 tsp baking soda
1/3 c orange juice
2 eggs
1 c vegetable oil
1 tsp salt

Steps:

  • 1. Preheat oven to 325. Grease and flour 9x13 pan.
  • 2. Peel and core about 3 to 4 apples. Finely chop apples (you want the pieces small).
  • 3. In a large mixing bowl, combine flour, sugar, baking soda, salt, and cinnamon. Whisk together.
  • 4. Add eggs, oil, and orange juice. Mix well. I use a wooden spoon to mix.
  • 5. Fold in diced apples (the batter will be thick).

2 c flour
2 c sugar
1 c vegetable oil
2 tsp cinnamon
1/2 c chopped walnuts
2 medium granny smith apples
4 eggs

Steps:

  • 1. Preheat Oven to 350 degrees. Spray bundt pan with bakers choice (preferrably).
  • 2. In med. bowl mix eggs, oil, cinnamon, apples and walnuts. Make sure apples get coated good. In large bowl mix flour and sugar till well blended. Then add your wet ingredients. Will become very thick. I smash the mixture with a cake spatula. To ensure it all mixes in.
  • 3. Pour mixture into bundt pan. Bake at 350 for 55 to 60 minutes. When butter knife comes out clean cake is done. Let cake cool for 5 to 10 minutes and release from pan while cake is still warm. Each oven varies.
  • 4. I like a glaze over my cake.I add it when the cake has cooled down to when it is just warm So i use the following ingredients. Put ingredients in zip- loc bag, cut small tip of bag, squeeze over cake 1/4 -cup milk 2- cups powdered sugar 1/2 tsp. vanilla

1 1/4 cups milk
2 cups sugar
1/2 cup shortening
3 ounces unsweetened chocolate
2/3 cup milk
1/2 teaspoon salt
2 teaspoons vanilla

Steps:

  • Heat oven to 350 degrees. Grease bottom and sides of rectangular pan, 13 x 9 x 2 inches, or 2 round pans, 9 x 1 1/2 inches; lightly flour.
