CAMPFIRE HOBO DINNER

Campfire Hobo Dinner image

In the sixties I was a Camp Fire Girl and this is a recipe we learned to make and cook over a campfire. We made ours with a pork chop, potatoes, carrots and onion. I've tried to revise it so you can use any of your families favorite vegetables and meat. You could make these before you leave home and put them in a waterproof container in your ice chest. List of meats that work good: chicken tenders, smoked sausage slices, ground beef patties, ground turkey patties, thin boneless pork chops. List of vegetables that work good: carrots, green beans, corn, mixed vegetables, etc. (Vegetables can be fresh, frozen or canned). Be creative!

BOILED DINNER

Boiled Dinner image

I first had boiled dinner at a friends house and I loved it. The first time I made it I used rutabagas I took it to my future hubby's family's house and his family loved it. I don't use rutabagas as they are very hard to cut the skin off. I find the ham with a bone in it is best for flavor, but you can use boneless if preferred. Leftover ham is great to use in this. I serve mine in a bowl with white vinegar sprinkled over top. My family loves boiled dinner and my future hubby loves it made this way.

  • Place the cut up cabbage in a big pot. Cover the cabbage with water just covering.

Tips:

  • Choose the right pot: A large pot with a lid is best for cooking hobo dinners. This will help to evenly distribute the heat and prevent the food from burning.
  • Layer the ingredients carefully: Start with a layer of vegetables on the bottom of the pot. This will help to prevent the meat from sticking to the pot and will also help to create a flavorful broth.
  • Use a variety of vegetables: Feel free to use any vegetables that you like in your hobo dinner. Some popular choices include potatoes, carrots, onions, and celery.
  • Season the meat well: Before adding the meat to the pot, season it liberally with salt, pepper, and any other desired spices. This will help to add flavor to the meat and the entire dish.
  • Cook the dinner over low heat: Hobo dinners should be cooked over low heat for a long period of time. This will help to tenderize the meat and vegetables and will also help to prevent the food from burning.
  • Check the dinner regularly: As the dinner cooks, check it occasionally to make sure that the vegetables are not overcooking and that the meat is cooked through.

Conclusion:

Hobo dinners are a delicious and easy way to cook a meal outdoors. They are perfect for camping, picnics, or any other time you want to enjoy a simple and hearty meal. With a little planning and preparation, you can create a hobo dinner that everyone will love.
