BOILED RAISIN CAKE

Boiled Raisin Cake image

This recipe was in a box of loose recipes I'd cut out of magazines and newspapers. I'm posting it here so it won't get lost. See NOTE at bottom of recipe if you don't have pastry flour. UPDATE-- Made this today. It didn't rise much, maybe it's not supposed too. I did use pastry flour. The flavor is wonderful. I dropped the salt down to 1/2 teaspoon, and used butter instead of shortening. There's less than 1/2 left it was so tasty.

Categories     Dessert

Time 1h10m

Yield 10 serving(s)

Number Of Ingredients 11

2 cups raisins
1 cup brown sugar
1 cup hot water
1/2 cup shortening
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove
1 teaspoon vanilla
2 cups pastry flour
1 teaspoon baking soda

Steps:

  • In saucepan. place raisins, brown sugar, hot water, shortening, salt, cinnamon, nutmeg, and cloves.
  • Bring mixture to boiling point, cover and let simmer for 6 minutes.
  • Cool to lukewarm and add vanilla.
  • Add soda to flour and mix.
  • Combine flour and raisin mixture well.
  • Bake in buttered 9X5" loaf pan in 325° oven for 1-1 1/4 hours. Cool in pan.
  • This cake improves with keeping.
  • -------------------------------------.
  • NOTE--It can be a challenge to find pastry flour. Even well-stocked supermarkets seldom carry more varieties than cake flour, all-purpose flour (9% to 12% protein), and bread flour. If you can't find pastry flour, you can mix your own by combining cake flour and all-purpose flour in a ratio somewhere between two parts cake flour to one part all-purpose and one part cake flour to one part all-purpose.

BOILED RAISIN CAKE

Boiled Raisin Cake image

This is a family recipe that I remember very well from when I was a child. My mother made it very often. It is a very moist cake that will need no frosting. The sugar you sprinkle on before baking is all the frosting it will need. It makes a lovely crispy topping. I hope you all enjoy it as my family has for many, many years.

Provided by Joan Abbott

Categories     Cakes

Time 1h10m

Number Of Ingredients 12

2 c raisins covered with water and boiled 20 minutes.
3 large egg
1 1/3 c shortening
2 c raisin water with 2 tsp. baking soda dissolved in it
2 c sugar
2 tsp vanilla
1 tsp salt
2 tsp cinnamon
1 tsp ground cloves
1 c chopped walnuts
1/4 tsp allspice
4 c flour

Steps:

  • 1. Place raisins in a saucepan and cover with water. Bring to a boil and reduce heat to simmer, simmer for about 20 minutes. Drain raisins and reserve the water they where boiled in. Measure out two cups of the water and dissolve two teaspoons of baking soda in the water. . . This will make a very large cake. It is a very moist cake and will need no frosting.
  • 2. Mix shortening and sugar then add eggs. Mix in the raisin water. Add the vanilla.
  • 3. Mix the dry ingredients together and then mix in the dry ingredients.Pour into a greased 9x13 pan. Generously sprinkle granulated sugar all over the top of the cake batter. Place in a 350 degree oven and bake for 35 to 50 minutes or till toothpick inserted in the center comes out clean

Tips:

  • Use fresh ingredients whenever possible, especially for the fruits and vegetables. This will give your cake the best flavor and texture.
  • Make sure your baking powder and baking soda are fresh. Old baking powder and baking soda can cause your cake to fall flat.
  • Do not overmix the batter. Overmixing can make the cake tough.
  • Bake the cake in a preheated oven. This will help the cake rise evenly.
  • Do not open the oven door during baking. This can cause the cake to fall.
  • Let the cake cool completely before frosting it. This will help the frosting set properly.

Conclusion:
