JALAPENO POPPERS

Time 1h5m

Yield 10 servings

Number Of Ingredients 3

20 fresh jalapenos, 2 to 3 inches in size
Two 8-ounce packages cream cheese, slightly softened
1 pound thin (regular) bacon, slices cut in half

Steps:

  • Preheat the oven to 275 degrees F. Set a wire rack over a baking sheet.
  • If you have them, slip on some latex gloves for the pepper prep. Cut the jalapenos in half lengthwise. With a spoon, remove the seeds and white membranes (the source of the heat; leave a little if you like things HOT). Smear cream cheese into each jalapeno half and then wrap with a bacon piece (1/2 slice). Secure by sticking a toothpick through the middle. Place on the rack in the baking sheet.
  • Bake for 40 to 45 minutes. (You don't want the bacon pieces to shrink so much they start to squeeze the jalapenos.) If after 45 minutes the bacon doesn't look brown enough, just keep cooking until the bacon is sizzling.
  • Serve immediately, or they're also great at room temperature.

Time 1h

Yield 16 jalapeño poppers

Number Of Ingredients 10

4 ounces cream cheese, at room temperature
1/2 cup shredded smoked Gouda (about 2 ounces)
1/2 cup shredded mild Cheddar (about 2 ounces)
2 teaspoons finely chopped chives
1 teaspoon lime zest
1 1/2 teaspoons lime juice
1/4 teaspoon kosher salt
Pinch freshly ground black pepper
8 jalapeños, halved lengthwise, seeds removed
8 slices bacon, halved crosswise

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil.
  • Add the cream cheese, smoked Gouda, Cheddar, chives, lime zest, lime juice, salt and pepper to a medium bowl. Mix thoroughly until evenly combined.
  • Divide the cream cheese mixture between the jalapeño halves, pressing to fill all the way to the top edge.
  • Wrap a piece of bacon around each stuffed jalapeño so the ends of the bacon lie underneath. Place the wrapped jalapeños, stuffed-side up, on the prepared baking sheet. Bake until the bacon is crispy and the cheese mixture is just beginning to bubble out from the top and bottom of the jalapeños, 16 to 18 minutes. Remove from the oven and let cool 10 minutes before serving.

JALAPENO POPPER MINI BISCUITS

Jalapeno Popper Mini Biscuits image

It's hard to hold back with these spicy little poppers around. Store-bought biscuit dough makes easy little appetizers, stuffed with our cheesy jalapeno filling.

Categories     appetizer

Time 20m

Yield 8 to 10 servings (3 to 4 biscuits per person)

Number Of Ingredients 7

5 jalapeno peppers
1/2 teaspoon vegetable oil
1 large egg
4 ounces cream cheese, at room temperature
1 cup shredded mozzarella (about 5 ounces)
Kosher salt
One 16.3-ounce tube store-bought biscuit dough

Steps:

  • Position an oven rack 4 to 5 inches from the heating element, and preheat the broiler. Line a baking sheet with foil.
  • Cut the stem end off the jalapenos, cut each in half lengthwise and remove and discard the seeds (wear food-grade gloves if your skin is sensitive). Arrange the jalapenos skin-side up on the prepared baking sheet, and brush with the oil. Broil until the peppers are blackened and puffy, 3 to 4 minutes. When cool enough to handle, rub off the skins (running under cold water helps). Cut 2 of the halves into large dice so you have 32 pieces (1 for the top of each biscuit); set aside. Finely chop the rest of the peppers, and transfer to a medium bowl.
  • Switch the oven from broil to bake, and preheat to 400 degrees F. Remove the foil from the baking sheet, and line it with parchment. Beat the egg well in a small bowl.
  • Add the cream cheese, mozzarella and half the egg to the bowl with the chopped peppers, add 1/4 teaspoon salt and mix to combine.
  • Separate the biscuit rounds, and cut each into quarters. Make a deep indentation in the center of each quarter, and fill with a heaping teaspoon of the pepper-cheese mixture (it will mound above the biscuit a fair amount). Brush any exposed biscuit with the remaining beaten egg. Bake until the biscuits are puffed and golden around the top, 10 to 12 minutes. Garnish each with a piece of reserved jalapeno.

GRILLED STUFFED JALAPENO CHILES

Time 30m

Yield 8 poppers

Number Of Ingredients 5

8 whole fresh jalapenos
1 cup shredded mozzarella
1 teaspoon chopped fresh oregano
Salt and freshly ground black pepper
8 slices center-cut smoked bacon

Steps:

  • Preheat a gas or charcoal grill or stovetop grill pan over high heat.
  • Grill the jalapenos until browned or blistered on all sides and slightly softened, 3 to 5 minutes. Set aside to cool.
  • Meanwhile, mix the cheese and oregano in a small bowl. Season with salt and pepper.
  • To remove the seeds from the jalapenos, make a crosswise cut at the stem end of each jalapeno, then slice lengthwise down the middle, being careful not to cut the jalapeno completely in half. Peel open the sides of each jalapeno and, using a spoon, gently scrape out the seeds and veins. Fill the cavities with 1 tablespoon of the cheese-oregano mixture. Wrap 1 slice of bacon tightly around each stuffed jalapeno to seal in the cheese.
  • Grill, starting the poppers on the side where the bacon-wrapping ends, until the bacon is crisp and fully cooked, about 5 minutes. Serve immediately.

Tips:

  • Choose the right peppers: Look for firm, glossy peppers with smooth skin. Avoid any peppers with blemishes or bruising.
  • Wear gloves: Capsaicin, the compound that gives peppers their heat, can irritate your skin. Wear gloves when handling peppers to avoid discomfort.
  • Remove the seeds: The seeds are the hottest part of the pepper. If you want a milder dish, remove the seeds before stuffing.
  • Use a variety of fillings: There are endless possibilities for fillings. Try a combination of meats, cheeses, vegetables, and spices.
  • Bake or fry: Stuffed jalapenos can be baked or fried. Baking is a healthier option, but frying will give you a crispier crust.
  • Serve with your favorite dipping sauce: Stuffed jalapenos are delicious with a variety of dipping sauces, such as sour cream, ranch dressing, or guacamole.

Conclusion:

Bobby Flay's stuffed jalapenos are a delicious and versatile appetizer or snack. With a variety of fillings and cooking methods to choose from, there's a recipe for everyone. So next time you're looking for a spicy treat, give these stuffed jalapenos a try. You won't be disappointed!
