  • Butter a 13 x 9-inch baking dish. Cut twenty 1-inch slices from baguette and arrange in one layer in baking dish. In a large bowl whisk together eggs, milk, nutmeg, vanilla, and 3/4 cup brown sugar and pour evenly over bread. Chill mixture, covered, until all liquid is absorbed by bread, at least 8 hours, and up to 1 day.
  • Preheat oven to 350°F.
  • In a shallow baking pan spread pecans evenly and toast in middle of oven until fragrant, about 8 minutes. Toss pecans in pan with 1 teaspoon butter and salt.
  • Increase temperature to 400°F.
  • Sprinkle pecans and blueberries evenly over bread mixture. Cut 1/2 stick butter into pieces and in a small saucepan heat with remaining 1/4 cup brown sugar, stirring, until butter is melted. Drizzle butter mixture over bread and bake mixture 20 minutes, or until any liquid from blueberries is bubbling.
  • Make syrup while French toast is baking:
  • In a small saucepan cook blueberries and maple syrup over moderate heat until berries have burst, about 3 minutes. Pour syrup through a sieve into a heatproof pitcher, pressing on solids, and stir in lemon juice. Syrup may be made 1 day ahead and chilled, covered. Reheat syrup before serving.
  • Serve French toast with syrup.

4 cups blueberries, stemmed, rinsed and drained
3 cups water
2 strips lemons, rind of
3 cups sugar
lemon juice

Steps:

  • Pour the blueberries into a saucepan and crush them with a potato masher or a wooden spoon until most of the skins are broken.
  • Add 1 cup of water and strips of lemon peel and bring to a simmer.
  • Turn heat down to low and cook the berries for 5 minutes at just under a simmer.
  • Pour the hot berries into a strainer lined with two layers of cheesecloth and let the blueberry juice drip through.
  • Twist the cloth to extract all the juice; there should be about 2 cups.
  • Discard the berry pulp.
  • Combine the remaining 2 cups water with the sugar in a small saucepan.
  • Bring the mixture to a boil, stirring, until the sugar is dissolved and the mixture is clear.
  • Wash down the sides of the pan with a wet pastry brush, then boil the syrup, without stirring, until it reaches 260 degrees on a candy thermometer.
  • Add the blueberry syrup to the sugar syrup and bring the mixture to boil.
  • Boil for 1 minute. Let the syrup cool, then add lemon juice to taste. Pour the syrup into two pint jars and refrigerate if you plan to use it in a month or two.
  • To can (for indefinite storage) Pour into canning jars with 1/2 inch headspace. Process in hot water bath for 30 minutes.
  • Cool.

1 teaspoon baking powder

1 cup buttermilk, room temp
1/2 cup milk, room temp

  • Preheat oven to 200 degrees.

1/4 cup water
1 lemon, peeled and juiced
4 sprigs fresh thyme, lemon thyme preferred
3 cups diced cantaloupe
3 cups diced seedless watermelon
3 cups diced honeydews
1 pint blueberries

Steps:

  • Syrup: bring all ingredients to a gentle boil in a small saucepan. Simmer for 5 minutes.
  • Remove from heat and allow to steep 20 minutes. Discard peel and sprigs.
  • Allow to cool to room temperature. If not using right away, refrigerate up to one week.
