OVERNIGHT BLUEBERRY FRENCH TOAST CASSEROLE

Overnight Blueberry French Toast Casserole image

I made this for Christmas morning brunch, perfect to put in the oven and go open presents while it bakes. You can top with syrup or whipped cream or nothing at all. I found several different recipes similar to this one, but none had everything I wanted to do with it, so I thought I'd try to make my own. I think it is a very good start, but please, let me know what you think!

  • Prep Ahead: Save time by prepping the sausage and vegetables beforehand. You can also mix the dry ingredients together in advance.
  • Choose Sweet Sausage: For a more flavorful dish, opt for sweet sausage. You can use spicy sausage if you prefer a kick of heat.
  • Use Fresh Blueberries: Fresh blueberries burst with flavor and add a vibrant color to the dish. If you don't have fresh blueberries, you can use frozen blueberries that have been thawed and drained.
  • Don't Overmix: When combining the wet and dry ingredients, mix until just combined. Overmixing can result in a tough casserole.
