1 tablespoon cornstarch
1 cup boiling water

Steps:

  • Preheat oven to 350°. Toss blueberries with cinnamon and lemon juice; pour into a greased 8-in. square baking dish. In a small bowl, combine flour, sugar and baking powder; stir in milk and butter. Spoon over berries. , Combine sugar and cornstarch; sprinkle over batter. Slowly pour boiling water over all. 8 large eggs

1 lemon zest

1 pinch salt
4 tablespoons sweet butter

  • In a butter 8 X 8 oven proof pan place 1/2 the bread cubes in pan place 1/2 the blueberries top remaining bread and then blueberries.

  • Pour over bread pressing gentle to submerge bread then cover with plastic wrap and soak for one hour.

8 ounces cream cheese, at room temperature
1 (16 1/2 ounce) can blueberries, rinsed and drained well
1 cup confectioners' sugar
2 tablespoons fresh lemon juice

Steps:

  • NOTE-I use Duncan Hines because they do not have pudding in the mix as do the Betty Crocker and Pillsbury brands.
  • If you are using another brand, make sure it does not have pudding already in the mix or the texture may not be the same.
  • Preheat oven to 350.
  • Grease and flour a 10-inch Bundt pan (or use Baker's Joy as I do).
  • In a large bowl, stir together the cake mix, pudding mix and sugar.
  • Make a well in the center and add the water, oil, eggs and cream cheese.
  • Beat on low speed until blended.
  • Scrape bowl.
  • Beat on medium speed for 2 minutes.
  • (This will be a fairly thick batter.) Gently stir in the blueberries.

  • Preheat the oven to 350 degrees F.
  • Spread the bread cubes out on a baking sheet and bake until toasted and golden, tossing halfway through, about 15 minutes. Let cool.

1/2 c margarine
1 c granulated sugar
1 large egg
2 c sifted flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1/4 tsp cloves
1 1/4 c applesauce
1 1/2 c blueberries-frozen or 1 lb. can drained
LEMON SAUCE:
3/4 c granulated sugar
2 Tbsp cornstarch
1/4 tsp salt
2 c water
1 large egg, slightly beaten
1 tsp grated lemon peel
3 Tbsp lemon juice

Steps:

  • 1. Cake: Cream margarine and sugar; beat in egg. Add dry ingredients alternately with applesauce, beating till blended.
  • 2. Fold in blueberries. Pour into a 6 cup greased and floured mold, or 9x13-inch baking dish. Bake at 350 for about 1 hour and 10 minutes.
  • 3. Test near center with toothpick for doneness. Decorate with lemon sauce and candied fruit if desired.
  • 4. Lemon Sauce: Mix sugar, cornstarch and salt. Slowly stir in water and slightly beaten egg.
  • 5. Cook and stir till mixture thickens. Remove from heat; stir in lemon peel and lemon juice.

Increase heat; boil until mixture thickens slightly, stirring often, about 5 minutes. Remove from heat; add strawberry mixture.
  • Line 6-cup bowl with 3 sheets plastic wrap, leaving 6-inch overhang. Generously butter 1 side of bread slices. Line bowl with bread, buttered side up, cutting pieces to cover bowl completely. Pour berry mixture into bread-lined bowl. Top with remaining bread, buttered side down, cutting pieces to cover completely. Fold plastic wrap over bread. Place plate slightly smaller than top of bowl atop pudding. Weigh down plate with 4 pounds of canned goods or dried beans and chill at least 12 hours and up to 36 hours.
  • Beat cream, powdered sugar, and vanilla in large bowl until peaks form. Remove weights and plate from pudding. Open plastic wrap. Place large plate atop bowl and invert pudding. Remove bowl, then plastic. Spoon pudding onto plates. Serve with whipped cream.

1 (16.25 ounce) Betty Crocker white cake mix
1 1/4 cups water
1/3 cup vegetable oil
3 eggs
12 ounces fresh blueberries (rinsed and drained)
3 Tablespoons sugar
1 Tablespoon flour
1 Tablespoon water
1 (3.4 ounce) package instant cheesecake pudding
1 1/2 cups milk
1 (8 ounce) package cream cheese (softened to room temp)
1 pint heavy whipping cream
2 cups powdered sugar

Steps:

  • Preheat oven to 350°F. Prepare cake according to the instructions on the box adding in the water oil and eggs, mixing until combined.
  • Bake cake in 9 x 13-inch pan for 20-22 minutes or until an inserted toothpick comes out clean. Let cool for 10 minutes.
  • To prepare the blueberry sauce, rinse the berries. In a medium-sized sauce pan, combine blueberries, sugar, flour and water; stir well. Cook over medium-high heat until mixture starts to bubble, stirring often. Turn down heat and let simmer to allow the blueberries to soften. Cook until sauce thickens; maybe 10-15 minutes. Stir often so the bottom does not burn.
  • Allow to cool for 20 minutes.
  • While the cake is still warm, take the end of a wooden spoon and poke holes all over the top of your cake.
  • Prepare the pudding filling by combining cheesecake pudding with milk and whisk until the pudding is dissolved. Pour pudding over top of cake, filling the holes. Refrigerate at least 10 minutes until the pudding is firm.
  • Pour blueberry sauce over top of the cake and refrigerate until cake and toppings are cooled.
  • Beat cream cheese on medium-high speed for 2-3 minutes until cream cheese is smooth and free of lumps. Scrape down the sides of the bowl occasionally.
  • Add 3 Tablespoons of the heavy whipping cream and beat it into the cream cheese until the cream cheese resembles a liquid mixture.
  • Then, add the remaining heavy whipping cream and beat on medium-high speed. Once the cream starts to thicken, slowly add the powdered sugar and beat until stiff peaks form. Spread over cooled cake and refrigerate until served.

12 ounces French bread, cubed (about 6 cups)
1 (16 ounce) package frozen blueberries (3 cups if fresh)
12 ounces cream cheese, softened (I recommend reduced fat)
1 cup sour cream (I recommend reduced fat)
2/3 cup brown sugar, firmly packed
3/4 cup milk (I recommend reduced fat)
1/2 cup maple syrup
10 eggs, beaten
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Coat 9x13-inch glass baking dish with cooking spray; place bread cubes inside. Sprinkle half of the blueberries on top.
  • In a large bowl, beat cream cheese until smooth. Add sour cream, brown sugar, milk, and maple syrup. Continue beating until smooth. Add eggs, cinnamon, and vanilla extract. Continue beating until mixture is blended.
  • Pour cream cheese-egg mixture over the bread and berries. Cover with foil and refrigerate overnight.
  • Remove from refrigerator about 30 minutes prior to baking. Bake, with foil on, in a preheated 350 degree F oven for 30 minutes.
  • Remove foil and continue baking until there are no signs of visible liquid egg, about 20-25 minutes longer.
  • Sprinkle remaining blueberries on top and serve with maple syrup if desired. Refrigerate leftovers.

This is a recipe from my mother, who got it from her mother. To me it's more like a cake than a pudding, but hey, who am I to question my mother. It was and still is a summertime favorite when blueberries are in season. The original recipe called for Huckleberries. We could not always or rarely find them, so mother used the blueberries. When I was young, I would eat this for breakfast. The hard sauce sounds a little unusual with the vinegar, give it a try. You will be pleasantly surprised. I have given the exact recipe that was in my mother's manuscript cookbook. However I use up to 2 quarts of blueberries and closer to 1 teaspoon of freshly grated nutmeg. The original hard sauce recipe called for a good lump of butter, I calculated that to 2 tablespoons.

1 quart blueberries
1 tablespoon butter, room temperature
2 cups sugar
3 egg yolks
1 cup whole milk
2 cups flour

1 tablespoon cornstarch
1 tablespoon cider vinegar

  • Preheat oven to 325 degrees F.
  • Lightly grease the sides and bottom of 2x9x13 inch baking pan with shorting, dust with flour and tap out excess.
  • Sift together all dry ingredients, set a side.
  • Cream butter, sugar and egg yolks together.
  • Add milk and dry ingredients alternatly to the butter, sugar and egg yolks.
  • Fold in stiffly beaten egg whites.
  • Roll berries well in flour.
  • Fold berries in last.
  • Bake in slow oven, 1-1 1/2 hours.
  • In my oven it took 1 hour.
  • Or until a toothpick inserted comes out clean and is golden brown.
  • Hard Sauce:.
  • Mix all ingredients well in a medium saucepan.
  • When thickened add vanilla
  • Dice cold butter.
  • Stir into sauce one piece at a time, stirring until each piece is melted before adding the next piece.
  • Serve warm or at room temperature.
  • Refrigerate leftovers.

1 quart milk
1/2 cup sugar
6 eggs, beaten
2 cups blueberries, fresh

1 egg yolk

Steps:

  • Preheat oven to 375.
  • Grease a 13 x 9 glass baking dish.
  • Break bread into large pieces and place in a large bowl.
  • Pour in the milk and stir to combine. Let sit 10 minutes.
  • Add remaining pudding ingredients and stir to combine.
  • Pour into baking dish and bake 40-45 minutes until golden brown.
  • Remove from the oven and then make the sauce by melting butter and sugar together in a small sauce pan over low heat.
  • Off heat, whisk in egg yolk and Amaretto. Heat 2 more minutes then pour over the bread pudding. You may have more sauce than you need depending on your dish.
  • Serve hot or cold. I like it best hot.

1 tablespoon melted coconut oil, or as needed
6 eggs, at room temperature
1 cup canned coconut milk
⅓ cup coconut sugar
2 teaspoons vanilla extract
1 cup coconut flour

1 orange, zested

½ teaspoon ground cinnamon
