¼ cup shortening
½ cup brown sugar
¼ cup molasses
2 eggs
1 ½ cups wheat bran
½ cup milk
½ cup orange juice
2 cups blueberries (fresh or frozen)
1 tablespoon flour

Steps:

  • Preheat oven to 400°F and line 12 muffin cups with papers or grease well.
  • Combine flour, baking powder, baking soda, salt, in a bowl, mix well and set aside.

1/2 cup sugar
1/2 cup honey
2 extra-large eggs, lightly beaten
1 teaspoon pure vanilla extract
2 1/2 cups wheat bran
1 1/2 cups fresh blueberries (8 ounces)

Steps:

  • Preheat the oven to 350 degrees. Brush the top of a muffin pan with vegetable oil and line it with 12 paper liners.
