1/2 cup unsalted butter (melted)
1 large egg yolk (discard the egg white)
1 tablespoon packed brown sugar
2 cup blueberries* (fresh or frozen - see baking time adjustment if using frozen)
1 tablespoons lemon juice (freshly squeezed)
1/4 cup granulated sugar
2 teaspoons cornstarch

1-1/2 cups quick-cooking oats
1-1/2 cups sugar, divided
1/2 teaspoon baking soda
3/4 cup cold butter
2 cups fresh or frozen blueberries
2 tablespoons cornstarch
2 tablespoons lemon juice

  • In a large bowl, combine the flour, oats, 1 cup sugar and baking soda. Cut in butter until mixture resembles coarse crumbs. Reserve 2 cups for topping.
