BLUEBERRY MOJITOS
Blueberry and lime are two of my favorite flavors, so I added blueberries to my favorite mixed drink! This recipe can easily be doubled or tripled. To make simple syrup, combine 1/2 cup sugar and 1/2 cup water and cook over medium heat until the sugar is dissolved. Simple syrup will keep in the fridge for a week.-Michele Tungett, Rochester, Illinois

Steps:
- Add blueberries, lime juice, sugar and eight mint leaves to a cocktail shaker. Use the end of a wooden spoon or cocktail muddler to bash (or muddle) the mint into the lime juice and sugar. This releases oils from the mint, breaks up the blueberries and helps the sugar dissolve into the lime juice.
- Add rum, stir well, and then pour into a glass filled with ice, leaving about an inch of room then top with club soda. Serve with extra blueberries, mint leaves, and a lime slice.

Tips:
- Use fresh blueberries: Fresh blueberries have the best flavor and will give your mojitos a beautiful color. If you can't find fresh blueberries, you can use frozen blueberries, but be sure to thaw them before using.
- Use a good quality rum: The rum is the main ingredient in a mojito, so it's important to use a good quality rum. Look for a rum that is smooth and flavorful, with a nice balance of sweetness and spice.
- Use freshly squeezed lime juice: Freshly squeezed lime juice has a much better flavor than bottled lime juice. If you don't have a juicer, you can use a citrus reamer to extract the juice from the limes.
- Don't skimp on the mint: Mint is an essential ingredient in a mojito. Be sure to use fresh mint leaves, and don't be afraid to add a lot of them. The mint will add a refreshing flavor and aroma to your mojito.
- Use a muddler to crush the mint and blueberries: A muddler is a tool that is used to crush ingredients in a cocktail. Muddling the mint and blueberries will release their flavors and aromas, and it will also help to dissolve the sugar.
- Serve your mojitos immediately: Mojitos are best enjoyed fresh. Once you've made them, serve them immediately so that you can enjoy their delicious flavor and aroma.
Conclusion:
Blueberry mojitos are a delicious and refreshing cocktail that is perfect for any occasion. They are easy to make and can be enjoyed by people of all ages. Whether you are hosting a party or just relaxing at home, a blueberry mojito is the perfect drink to enjoy.
