  • Preheat oven to 325 degrees F.

3/4 c butter chopped
1/2 c powdered sugar
1/4 c packed light brown sugar
1-2 Tbsp milk as needed
1 zest of a lemon
CHEESECAKE
16 oz softened cream cheese ( 2 packages)
2 eggs
1/2 c granulated sugar
1 tsp lemon zest, grated
1 Tbsp lemon juice
20 ounce can(s) blueberry pie filling
OPTIONAL HOMEMADE BLUEBERRY FILLING
2 pt blueberries
1 c water
3/4 c sugar granulated
1/2 tsp lemon zest, grated
1 Tbsp lemon juice, fresh
1 dash(es) cinnamon

  • 1. Optional homemade blueberry filling: Skip if using canned filling. Place water, sugar, cinnamon , lemon zest, and lemon juice in a saucepan with blueberries. Bring to a boil. Mix corn starch with 2 TBs water.until disolved Add to blueberry mixture. IStir constantly until mixture boils and filling has thickened. Remove from heat .Cool and Refrigerate.
  • 2. Heat oven to 350 degree's. Line a 9x13 inch pan with foil or parchment paper. Grease pan before lining. Spray or grease foil or parchment afterwards.
  • 3. Place butter, flour, powdered sugar, brown sugar and lemon zest in food processor. Pulse until dough comes together. Empty in to a bowl. If it is really dry. Add 1 tablespoon of milk and knead with hands until a nice smooth ball forms.

  • 5. In a bowl beat the cream cheese and granulated sugar together until smooth. Beat in 1 egg at a time. Beat until egg are incorporated. Add the lemon juice, lemon zest. Beat until mixed in, and mixture is fluffy. Pour over crust.
  • 6. Place spoonfuls of blueberry filling on top scattered. Run a knife through filling to swirl filing in. Do not hit crust with knife.
  • 7. Place in oven and bake about 30- 40 minutes or until cake is not jiggly. Test with pick. Cooll and cut in to squares and Refrigerate. You may top with more blueberry filling if desired. This is designed to be a hand held cookie dessert.

  • Preheat oven to 350 degrees. Place all the lemon oreos in a food processor. Pulse until it forms crumbs, add in the melted butter and pulse again until crumbs are covered in butter.

14 oz can sweetened condensed milk
1/2 cup fresh lemon juice
2 teaspoons lemon zest
2 1/2 cups (about 13 oz) room-temperature blueberries

  • Preheat oven to 350 F. Line a 13x9 metal baking pan with foil, leaving a slight overhang on both sides to lift the bars out. Spray the pan/foil with cooking spray. Whisk the flour, oats, brown sugar, salt and baking powder together in a large bowl. Use a pastry blender (or your fingers) to cut the butter into the dry ingredients completely. 2 cups Gold Medal™ all-purpose flour
1/2 cup granulated sugar
1 tablespoon grated lemon peel
1 cup butter or margarine, softened
3/4 cup blueberry preserves
2 teaspoons grated lemon peel
1/2 cup powdered sugar
2 to 3 teaspoons lemon juice

Steps:

  • Heat oven to 350°. Mix flour, granulated sugar and 1 tablespoon lemon peel in large bowl. Cut in butter, using pastry blender or crisscrossing 2 knives, until mixture looks like coarse crumbs. Press mixture in ungreased rectangular pan, 13x9x2 inches.
  • Bake 25 to 30 minutes or until edges are light golden brown.
  • Meanwhile, mix preserves and 2 teaspoons lemon peel in small bowl. Spread over hot crust. Bake 5 minutes longer. Cool completely, about 1 hour.
  • Stir powdered sugar and lemon juice in small bowl until smooth and thin enough to drizzle. Drizzle over bars. For bars, cut into 6 rows by 6 rows.

8 ounces unsalted butter, softened
2 1/2 cups all-purpose flour
1 1/2 cups old fashioned oats (not quick oats)
1 cup desiccated coconut
1 1/3 cups packed light brown sugar
1 teaspoon salt
1 teaspoon baking powder
1 large egg, separated
14 ounces sweetened condensed milk
1/2 cup fresh lemon juice
2 teaspoons grated lemon zest
2 1/2 cups room-temperature blueberries (about 13 oz.)

Steps:

  • Preheat oven to 350°F Line 9×13-inch metal baking pan with foil, leaving a 1-inch overhang on the ends. Spray foil with cooking spray- bottom and sides of the pan.
  • In a large bowl, whisk together flour, oats, coconut, sugar, salt, and baking powder. Using a pastry cutter (or your fingers), blend the butter completely into the flour mixture. Transfer 2 cups of the crumb mixture to another bowl and reserve for the topping.
  • Blend the egg white into the remaining crumbs and then press the mixture into the bottom of the pan to form a level crust. Use the bottom of a flat, wide glass to tap the mixture and even it out.
  • Bake the crust 10-12 minutes, or until it starts to form a dry top.
  • Meanwhile, in a medium bowl, whisk condensed milk, lemon juice & zest, and egg yolk. Let mixture stand for 5 minutes (it will begin to thicken).
  • Sprinkle blueberries evenly over hot crust and then drop spoonfuls of the lemon mixture over the blueberries. Spread gently w/ a spatula to distribute as evenly as you can. Bake until lemon mixture begins to form a shiny skin- 7 to 8 minutes.
  • Sprinkle reserved crumble topping over the lemon-blueberry layer, pressing the streusel between your fingers into small lumps as you sprinkle. Bake until filling is bubbly at the edges and the topping is brown, 25 to 30 minutes.
  • Let bars cool in the pan on a rack until just warm, about an hour. Carefully lift them out of the pan using the foil overhang and transfer to a wire rack to cool completely. Remove foil and cut into 24 bars when cool. (If you have time to chill the bars, they're easier to cut cleanly when chilled).

1 3/4 cups flour
2/3 cup confectioners' sugar
1/2 teaspoon salt, divided
12 tablespoons butter, slightly softened
1 cup granulated sugar
3 tablespoons grated lemon zest
3/4 cup lemon juice
5 eggs, beaten lightly
6 egg yolks, beaten lightly
1/4 teaspoon vanilla extract
1/4 cup heavy cream
5 -6 tablespoons apple jelly
3 cups fresh blueberries

Steps:

  • Preheat oven to 375°F Spray a 13 x 9 inch pan with non-stick cooking spray. Line the pan with parchment or foil leaving a 3 inch overhang on each short end of the pan, and spray the lining with more cooking spray. Set aside.
  • In a medium bowl combine flour, confectioners' sugar, and 1/4 tsp salt. Cut 10 tbls butter into small pieces and cut into the flour mixture until mixture resembles coarse meal.
  • Pour mixture into the prepared pan and pat lightly to create an even layer. Bake until crust is light golden brown, about 30 minutes. Remove pan from oven and reduce heat to 350°F.
  • While the crust bakes place granulated sugar and lemon zest into a medium saucepan and rub zest into the sugar with a spoon until sugar is moistened.
  • Add the lemon juice, eggs and yolks, remaining 2 tbls butter, and 1/4 tsp salt and place the pan over medium-low heat. Cook, stirring constantly, until mixture thickens and registers 155F to 160F on a thermometer.
  • Off heat stir in the vanilla and cream. Pour the mixture through a mesh strainer set over a medium bowl. Discard remaining solids and immediately scrape the lemon mixture onto the warm crust, spreading evenly.
  • Bake the bars until the very center of the filling barely jiggles when you shake the pan, about 12 minutes. Remove from oven.
  • While the lemon bars bake heat the jelly in a small saucepan set over medium heat until it is warm and fluid. Off heat add the berries and gently fold until coated and shiny.
  • Spoon the berry mixture over the lemon bars and transfer the dish to a wire rack to cool completely.
  • Serve once the bars are cooled, or cover loosely with plastic wrap and refrigerate. Bars can be made 2 days in advance.
