Steps:
- To prepare the dough, combine 2 1/2 cups flour with the salt, sugar and yeast in a large bowl. In a small saucepan, combine milk and butter, and place over low heat until milk is lukewarm. Pour into a bowl, and add eggs, vanilla and orange zest; mix until blended. Stir liquid ingredients into dry ingredients to make a soft dough, adding more flour if necessary.
- Using a mixer with a dough hook, or by hand, knead dough until smooth and springy. Place in an oiled bowl, and cover with plastic wrap. Leave to rise in a warm place until double in size, about 1 hour. (Or let rise in refrigerator overnight, returning to room temperature before proceeding to next step.)
- Punch air out of dough, and press it out into a shallow 12-by-8-inch baking pan. Cover with a kitchen towel, and leave to rise in a warm place 15 to 20 minutes longer.
- Heat oven to 400 degrees. Prepare a glaze by mixing together egg and orange juice until blended. Paint glaze over dough. Spread blueberries on dough in a single layer. Chop pecans until splintery but not too fine. Mix with sugar and cinnamon, and sprinkle evenly over blueberries.
- Place pan in oven, and bake 15 minutes. Reduce heat to 350 degrees, and bake until dough is risen and golden brown at edges, about 15 minutes more. Allow to cool about 10 minutes before slicing into 9 rectangles. Serve warm.

I found this recipe in Cake Mix Cookies by Camilla Saulsbury. My blueberries are just arriving and I had picked 2 cups and wanted something quick and easy. When I took these to work everyone wanted the recipe. I think they taste better after chilling overnight.

BLUEBERRY COBBLER (KUCHEN)
This is my Moms recipe and is very easy with few ingredients. It works very well with blackberries as well as fresh peaches, just adjust sugar to taste. If using blackberries thicken slightly with cornstarch in the first step.

- 2. Shape into a ball. Firmly press the pastry on the bottom and 1 inch up the sides of an ungreased 9-inch springform pan.
- 3. Place 3 cups blueberries in the prepared crust. Combine 2/3 cup sugar, 2 tablespoons flour, and cinnamon. Stir well. Sprinkle the cinnamon misture over the blueberries in the crust.
- 4. Bake on the lowest rack of the oven at 400 degrees for 50 to 60 minutes or until the crust is golden brown. Remove from the oven and immediately top with 2 cups fresh blueberries. Cool in the pan on a wire rack. Carefully remove the sides of the springform pan and enjoy!
Tips:
- Use fresh blueberries: Fresh blueberries have a more intense flavor and will produce a better kuchen. If you can't find fresh blueberries, you can use frozen blueberries that have been thawed.
- Don't overmix the batter: Overmixing the batter will make the kuchen tough. Mix the batter just until the ingredients are combined.
- Use a springform pan: A springform pan will make it easy to remove the kuchen from the pan after it has been baked.
- Bake the kuchen until the top is golden brown and a toothpick inserted into the center comes out clean: The kuchen should be baked for about 45 minutes to 1 hour.
- Let the kuchen cool completely before serving: The kuchen will be easier to slice and serve if you let it cool completely.
Conclusion:
Blueberry kuchen is a delicious and easy-to-make dessert that is perfect for any occasion. With its sweet and tangy blueberries and its flaky crust, this kuchen is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert to make, give blueberry kuchen a try. You won't be disappointed.
