BLUEBERRY GELATIN SALAD
This is a recipe I discovered about 25 years ago when grape gelatin was hard to find! It's a terrific side dish or a delicious dessert. It's very rich in flavor and can be made ahead of time. Also good with cherry gelatin and cherry pie filling.

- In a large bowl, mix together gelatin powder, boiling water, pineapple and pie filling. Pour into a mold, or glass baking dish, and refrigerate until set, at least 2 hours.
- In a medium bowl, mix together the cream cheese, sour cream, sugar and vanilla until smooth. Spread over the top of the gelatin. If using a mold, unmold the gelatin before applying topping.

- In a large bowl, dissolve gelatin in boiling water; stir in blueberries. Pour into a 11x7-in. dish; chill until set. , In a large bowl, beat cream cheese and sugar until smooth. - 1. Dissolve jello in hot water.
- 2. Combine pineapple and blueberry juice to equal 2 cps.--if not enough, add cold water.
- 3. Chill jello in a medium bowl in refrigerator just until thickened.
- 4. Fold in blueberries, pineapple and sour cream.
- 5. Put into a mold and chill until set.
- 6. Unmold when ready to serve.

This is one great tasting salad I enjoy making one time a year: when the blueberries are in season. It's pretty much the only thing I make with blueberries, since they are expensive. A pretty colored salad! This is a great salad to have for the 4th of July.

- In a medium bowl, whisk together the gelatin mix, sugar, lime juice, and boiling water for one minute, or until the gelatin is completely dissolved. Cover, and chill for one hour, or until slightly thickened.
- When the gelatin mixture is thick, whip with a whisk or electric mixer until light in color, and double in volume. Whisk in whipped topping, and fold in blueberries. Lightly grease a 5 or 6 cup gelatin mold, and fill with the gelatin mixture. Chill for 4 hours, or until firm. Carefully unmold onto a platter, and serve.
