Time 40m

Yield Makes 8 servings

Number Of Ingredients 10

24 ounces (about 2 pints) fresh blueberries
2 to 4 tablespoons sugar, see notes
2 tablespoons all-purpose flour
1 tablespoon fresh lemon juice or use water
Pinch fine sea salt
3/4 cup (100 grams) all-purpose flour
3/4 cup (65 grams) old-fashioned rolled oats
1/2 cup (100 grams) sugar, try combining 1/4 cup brown sugar + 1/4 cup granulated sugar
1/2 cup (115 grams) butter, melted (1 stick) or substitute 1/2 cup melted coconut oil
1/8 teaspoon fine sea salt

Steps:

  • Heat oven to 375 degrees Fahrenheit.
  • Add blueberries, lemon juice, 2 tablespoons of flour, sugar, and pinch of salt to a 9-inch pie dish (or use a 2-quart baking dish). Toss well until combined.
  • Combine flour, oats, sugar, and the salt in a medium bowl. Add the melted butter then stir until all the flour has been moistened by the butter and topping is crumbly.
  • Sprinkle over blueberry filling. (We like to use our hands to do this. As we sprinkle, we press the crumbles together to create larger clumps of topping.)
  • Bake 25 to 35 minutes until juices are thickened and the topping has turned light golden brown. Cool 10 minutes, and then serve.

BLUEBERRY PECAN CRUNCH CAKE

Blueberry Pecan Crunch Cake image

Topped with coarse Demerara sugar and chopped pecans, this might just be the crunchiest coffee cake you've ever made. It's also one of the easiest, as it's quickly whisked together in just one bowl. Soft, juicy blueberries dot the cinnamon-scented batter, making jammy pockets in the tender crumb. It will keep at room temperature for up to three days, though the topping does lose a little texture the longer it sits. But this cake is so good, its keeping qualities may be beside the point.

Time 1h15m

Yield 8 servings

Number Of Ingredients 13

1 1/2 cups/337 grams sour cream
3/4 cup/170 grams unsalted butter (1 1/2 stick), melted and cooled
4 large eggs
1 tablespoon vanilla extract
1 teaspoon kosher salt
1 1/4 cups/250 grams granulated sugar
1 1/2 teaspoons baking powder

2 tablespoons Demerara sugar

Steps:

  • Heat oven to 350 degrees and butter a 9-by-9-inch metal pan.
  • In a large bowl, whisk together the sour cream, butter, eggs, vanilla and salt until everything is well combined. Whisk in sugar. Add the dry ingredients in this order: baking powder, baking soda and cinnamon, whisking well in between additions. Then, whisk in the flour until just combined. Fold in blueberries.
  • Using a spatula, scrape the batter into the pan, smoothing the top. Sprinkle with the nuts and Demerara sugar. Bake until the top is golden and puffed, and a toothpick inserted into the center of the cake comes out clean, about 50 to 60 minutes. Transfer the cake to a rack, and let it cool in the pan.

Tips:

  • Use fresh blueberries for the best flavor. If you don't have fresh blueberries, you can use frozen blueberries, but be sure to thaw them before using.
  • Don't overmix the batter. Overmixing can make the pancakes tough.
  • Cook the pancakes over medium heat. This will help them cook evenly and prevent them from burning.
  • Serve the pancakes immediately with your favorite toppings, such as butter, syrup, or fruit.
  • For the blueberry crunch dessert, use a 9x13 inch baking dish. This will ensure that the dessert is not too thick or too thin.
  • Be sure to spread the blueberry mixture evenly over the bottom of the baking dish. This will help the crunch topping to cook evenly.
  • Bake the blueberry crunch dessert for 30-35 minutes, or until the topping is golden brown and the blueberries are bubbling.
  • Serve the blueberry crunch dessert warm or at room temperature. It can be stored in the refrigerator for up to 3 days.
