1 cup white sugar
1 tsp. baking powder
3 cups all-purpose flour
1 cup cold butter (2 sticks)
1 egg
1/4 tsp. salt
Zest and juice of one lemon
4 C. fresh blueberries
1/2 cup white sugar
4 tsp. cornstarch
4 ounces cream cheese
1/4 cup sugar
1 egg
Vanilla

Steps:

  • Preheat the oven to 375 F. Grease a 9×13 inch pan. In a medium bowl, stir together 1 cup sugar, 3 cups flour, and baking powder. Mix in salt and lemon zest. Use a fork or pastry cutter to blend in the butter and egg. Dough will be crumbly. Pat half of dough into the prepared pan. In another bowl, stir together the sugar, cornstarch and lemon juice. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Cream the cream cheese with sugar. Add beaten egg and vanilla. Stir well to combine. Drop by tablespoon over the blueberries. Crumble remaining dough over the top. Bake in preheated oven for 45 minutes, or until top is slightly brown. Cool completely before cutting into squares.

3 c blueberries
1/2 c sugar
1 1/2 c graham cracker crumbs
6 Tbsp butter melted
2 Tbsp sugar
1/2 c sugar
2 pkg (8 ounce) cream cheese softened
1 tsp vanilla extract
2 eggs

Steps:

  • 1. Combine blueberries and 1/2 cup of sugar in small saucepan. Cover and place on low heat. Simmer for 10 minutes and remove from heat. After pan cools place in the refrigerator to chill and thicken for 1-2 hours.
  • 2. Preheat oven to 350 degrees. Spray 9 x 13 inch baking dish with nonstick cooking spray. In small bowl combine graham cracker crumbs, 6 tablespoons melted butter and 2 tablespoons sugar. Press evenly into baking dish.
  • 3. In stand mixer with paddle attachment mix 1/2 cup sugar and cream cheese until smooth. Turn mixer to low; add vanilla extract and 1 egg at a time mixing just until incorporated. Pour cream cheese mixture over graham cracker crust.
  • 4. With chilled blueberry sauce make two thick lines down the length of the pan over the top of the cream cheese. Using bamboo skewers or chopsticks swirl in being careful not to scrap the crust on the bottom.
  • 5. Bake 40-45 minutes or until set in the center. Chill well before cutting. Refrigerate all leftovers.

1 cup quick cooking oats
1 3/4 cups sugar, divided
3/4 cup butter, melted
2 (8 oz.) pkgs. cream cheese, softened
4 large eggs
1 Tbs. fresh lemon juice
1 tsp. vanilla
2 cups fresh blueberries
powdered sugar for garnish

Steps:

  • Preheat oven to 375. Spray a 9"x13" baking dish with nonstick baking spray with flour or butter and flour it. In a mixing bowl, combine the 1 1/4 cups flour, melted butter, 3/4 cup sugar and oats. Lightly press this mixture in the bottom of the baking dish. Bake for 15 minutes. Remove and allow to cool. Reduce the heat to 325 degrees. While the crust is cooling prepare the filling. In a mixing bowl beat the cream cheese and sugar together with an electric mixer. Add in the 2 Tbs. flour, the eggs, vanilla and the lemon juice and blend just until mixed together. Sprinkle the blueberries evenly over the crust. Pour the cream cheese filling over all. Bake for 35 to 40 minutes or until a knife inserted 1 inch from the center comes out clean or the center is firm to touch. Remove and allow to cool for 2 hours. Chill in the refrigerator for about 3 hours. Remove and cut in squares. Garnish by sprinkling each square with powdered sugar.
