2 cups all-purpose flour, spooned into measuring cup and leveled-off
2 teaspoons baking powder
½ teaspoon salt
1 stick (½ cup) unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1½ teaspoons vanilla extract
1 teaspoon packed lemon zest, from 1 lemon
½ cup milk
2 cups fresh blueberries (frozen may be used but do not defrost)

Steps:

1 cup granulated sugar
1/2 cup butter or 1/2 cup margarine, softened
3 eggs
1 cup sour cream
2 cups all-purpose flour

1/2 teaspoon ground cinnamon

3 cups plus 1 tablespoon all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon coarse salt
1 cup buttermilk
1 1/2 cups fresh blueberries (9 ounces)
1/2 cup confectioners' sugar
1/2 cup freshly squeezed lemon juice (from 4 lemons)
2 teaspoons freshly grated lemon zest (from 1 lemon)

Steps:

  • Preheat oven to 325 degrees with rack in center of oven. Generously spray a nonstick 10-inch (14-cup) Bundt pan with nonstick cooking spray; set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until light and fluffy, about 3 minutes.
