2 teaspoons baking powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
1 cup packed light-brown sugar
1 cup granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 cup sour cream
2 cups blueberries
2 tablespoons grated lemon zest
Nonstick cooking spray, for pan
Confectioners' sugar, for dusting (optional)

Steps:

  • Preheat oven to 350 degrees. In a bowl, whisk 2 1/2 cups flour with baking powder and salt; set aside.
  • In a mixing bowl, cream butter and sugars on high speed until light and fluffy. Add eggs, one at a time, beating until incorporated. Beat in vanilla. Reduce speed to low; add flour mixture in three additions, alternating with two additions of sour cream.
  • In a bowl, toss blueberries and zest with remaining teaspoon flour; gently fold into batter. Coat a 12-cup nonstick Bundt pan with cooking spray. Spread batter in prepared pan.

Steps:

  • Heat oven to 350°F Butter a 12-cup bundt pan.
  • In a large bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
  • In another large bowl, beat butter (or margarine) until smooth. Add sugar and beat for 2 to 3 minutes until fluffy. Beat in eggs, one at a time, beating well after each addition. Steps:

  • Heat oven to 350°F. Generously spray 12-cup fluted tube cake pan with baking spray with flour. In small bowl, place blueberries. Remove 1 tablespoon dry cake mix; sprinkle over berries, and toss to coat. Set aside.

In response to the 1-star reviews: I'm not sure why people are having problems with the recipe. It is just an adaptation of Recipe #60676. I've made it numerous times without any problems (as you can see in the photos). There isn't any added sugar because the sugar is in the starter.

pam butter-flavored cooking spray (for bundt pan)
1 1/2 cups almond flour (also called almond meal, It is cheaper to buy online, I buy at www.almondsonline.com)
1 cup whole wheat pastry flour (ie Arrowhead Mills)
1/2 cup soy flour
1/4 cup whole wheat flour
1/4 cup unprocessed fine natural bran
3 1/4 teaspoons bread enhancer (It will help to make your whole-grain baking lighter in texture)
1 tablespoon baking powder
1 teaspoon salt
1 2/3 cups Splenda sugar substitute (the one that measure spoonful to spoonful like sugar)
3/4 cup soft margarine (i.e. Brand Canoleo or any other brand that is low in saturated fat and no hydrogenated oils)
3 large eggs
1 tablespoon orange zest
1 teaspoon vanilla extract
3/4 cup 1 1/2% buttermilk
2 cups frozen blueberries (frozen berries will keep from sinking to the bottom of the pan as it bakes)

Glaze:
2 1/2 cups, all-purpose flour
1 tbsp cornstarch
1/2 teaspoon salt
1/4 teaspoon baking soda
2/3 cup milk, room temperature
2/3 cup heavy cream, room temperature
2 teaspoons vanilla extract
2 3/4 cups caster sugar (superfine sugar)
1 3/4 sticks unsalted butter, room temperature
5 eggs, room temperature
1 1/2 cups fresh blueberries
juice from 2 lemons
powdered sugar - enough added to juice to make thick syrupy glaze .. it varies depending on how thick or runny you like your glaze

Steps:

  • Preheat oven to 325F In a large bowl, stir together the flour, cornstarch, salt and baking soda; set aside. In another bowl, combine the milk, cream and vanilla. Set aside. In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with your electric mixer, cream together the sugar and butter. Add the eggs, one at a time, scraping down the sides and bottom of the bowl as needed. On low-speed, add the flour in three additions, alternating with the milk mixture, beginning and ending with the flour. Scrape down the bowl between additions. Once everything has been added, run the mixer/beater for an additional 20 seconds on low. Generously coat a Bundt pan with baking spray then dust lightly with flour, shaking off excess. Pour the batter evenly into the pan. Use a spatula to fold in the blueberries once the batter is in the pan. Bake for 50-60 minutes, or until golden and a toothpick inserted in the center comes out clean. Place on a wire cooling rack and let cool in the pan for 5 minutes. After 5 minutes, place the wire rack face down on the cake. Invert and flip the rack; place on the counter. Give the cake a few seconds to let gravity do its thing, then, lift the pan off of the cake. Cool completely (or serve warm). Before serving, dust with sifted powdered sugar and then drizzle with the Lemon Glaze

Nonstick cooking spray, for pan
Confectioners' sugar, for dusting (optional

Steps:

  • 1. Preheat oven to 350 degrees. In a bowl, whisk 2 1/2 cups flour with baking powder and salt; set aside. 2. In a mixing bowl, cream butter and sugars on high speed until light and fluffy. Add eggs, one at a time, beating until incorporated. Beat in vanilla. Reduce speed to low; add flour mixture in three additions, alternating with two additions of sour cream. 3. In a bowl, toss blueberries and zest with remaining teaspoon flour; gently fold into batter. Coat a 12-cup nonstick Bundt pan with cooking spray. Spread batter in prepared pan. 4. Bake cake on bottom rack of oven until a toothpick inserted into center of cake comes out clean, 60 to 70 minutes. Cool in pan 20 minutes. Invert onto a rack; cool completely, top side up. One of my favorites is the combination of lemon and blueberry. I've made several of these bundt cakes; this is a new recipe I experimented with and enjoyed! NOTE: The glaze in the picture is the cream cheese glaze. : )

CAKE
1 box yellow cake mix
2 box of instant lemon pudding (3.4 oz box)
1 c sour cream
1/2 c oil
4 eggs
zest of 2 small lemons
juice of 1 small lemon
2 c fresh blueberries (or frozen, thawed and drained)
LEMON GLAZE (OR INSTEAD OF GLAZE, JUST DUST WITH POWDERED SUGAR, WHICH IS MY PERSONAL PREFERENCE)
1 c powdered sugar
2 Tbsp lemon juice
zest from 1 lemon
LEMONY CREAM CHEESE GLAZE (ANOTHER GLAZE OPTION, BACK BY POPULAR DEMAND)
4 oz cream cheese
1/4 c sugar
juice of 1 lemon
zest of 1 lemon

Steps:

  • 1. Heat oven to 350. Combine all ingredients except blueberries; fold blueberries in gently, by hand. Mixture will be thick and tacky. Spoon into greased bundt pan. Spread mixture so it is evenly distributed. Bake for 55 minutes or until wooden pick inserted in middle comes out clean. Cool in pan for about 10 minutes before inverting onto cooling rack. Cool completely.
  • 2. Once cake is cooled, make lemon glaze. For Powdered Sugar Based Glaze: Combine all ingredients together until smooth. For Cream Cheese Based Glaze: Heat cream cheese, sugar and lemon juice in microwave until melted (about 1 minute) and stir until creamy. Add lemon zest. Let cool slightly. Drizzle glaze onto cake. OTHER OPTION: Instead of using glaze, dust with powdered sugar.
