BLUEBERRY BRIE

Warm Blueberry Brie...we have this every year at our work's Christmas party. It is so tasty, it's addictive! You can also make this with raspberry sauce or sun dried tomatoes, both of which taste excellent. This will cook in the microwave in about 3 minutes. Serve with warm French baguette slices!

BLUEBERRY, WALNUT AND BRIE TARTLETS

Blueberry, Walnut and Brie Tartlets image

Another Bunco Group hit! I adapted this recipe from one of the cookbooks that you purchase in the grocery store while checking out. These are easy and simple to make with store bought miniature phyllo tartlets. In a pinch, you can make your own phyllo cups using phyllo sheets and a mini muffin pan.

Number Of Ingredients 5

24 frozen miniature phyllo tart shells
1/4 cup blueberries or 1/4 cup blackberry preserves
1/3 cup coarsely chopped walnuts, toasted

BAKED BRIE WITH BLUEBERRY CHUTNEY

Categories     Berry

Number Of Ingredients 9

1 cup blueberries (fresh or frozen)
2 tablespoons finely chopped onions (or 1 Tbsp dried onion)
1 1/2 tablespoons grated fresh ginger
1/4 cup brown sugar, packed
2 tablespoons cider vinegar
1 1/2 tablespoons cornstarch
1/8 teaspoon salt
3 inches cinnamon sticks
8-12 ounces round brie cheese

Steps:

  • 1. Combine all ingredients, except Brie, in a medium saucepan. 2. Bring to a boil, at medium heat, and boil for 1 minute, stirring constantly to avoid sticking or burning. 3. Remove from heat, discard the cinnamon stick and chill in a covered container until flavors are well blended and mixture is cold. 4. Preheat oven to 350 degrees. 5. Bake Brie on an ungreased cookie sheet for 10 to 12 minutes, or until soft. 6. Place on a serving plate and top with the cold blueberry chutney. 7. Serve with crackers.

Tips:

  • Use ripe, fresh blueberries: This will ensure that the berries are sweet and juicy, and they will hold their shape when baked.
  • Don't overmix the batter: Overmixing will make the muffins tough. Mix just until the ingredients are combined.
  • Bake the muffins at a high temperature: This will help them to rise quickly and create a light and fluffy texture.
  • Let the muffins cool completely before serving: This will allow the flavors to meld and the muffins to set.

Conclusion:

Blueberry muffins are a classic breakfast treat that are easy to make and always a crowd-pleaser. With their sweet and juicy blueberries, light and fluffy texture, and irresistible crumb topping, these muffins are sure to be a hit with everyone who tries them. So next time you're looking for a delicious and easy breakfast recipe, give these blueberry muffins a try!
