Try this recipe from Christine Cushing when grilling chicken, cornish hens or pork tenderloin! Frozen berries will work but it will take longer to reduce.

2 tablespoons vegetable oil
1 small onion, finely chopped
1 clove garlic, minced
1 teaspoon minced fresh ginger
2 cups wild blueberries, lightly mashed
1/2 cup cider vinegar
1/2 cup honey
1 tablespoon molasses
1 tablespoon ketchup
1 teaspoon paprika
coarse salt
freshly cracked black pepper, to taste
1/2 teaspoon ground cinnamon
1/2 teaspoon Dijon mustard
1/4 teaspoon ground nutmeg
1/4 teaspoon celery seed
1/4 teaspoon cayenne pepper, to taste
1/8 teaspoon ground cloves
2 tablespoons brown sugar

Steps:

  • Heat the vegetable oil in a small saucepan over medium-high heat.
  • Saute the onion, garlic and ginger until soft, about 3 minutes.
  • Stir in the blueberries and cook for an additional 2 minutes.
  • Add the cider vinegar, honey, molasses, ketchup, paprika, salt, pepper, cinnamon, Dijon mustard, nutmeg, celery seed, cayenne pepper, cloves and brown sugar.
  • Bring to a boil.
  • Reduce heat to low and simmer the sauce for 15 minutes.
  • Puree the mixture with an immersion blender.
  • If you want a"finer" sauce, strain it back into a clean saucepan.
  • Bring the sauce back to a simmer and cook a few minutes more.
  • Let cool completely.

1/4 cup chopped onion
1 garlic clove, minced
1 teaspoon olive oil
2 cups fresh or frozen blueberries, thawed
2 tablespoons brown sugar
1 chipotle pepper in adobo sauce, chopped
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
BURGERS:
1 pound lean ground turkey
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup sliced fresh mushrooms
4 slices reduced-fat provolone cheese
4 whole wheat hamburger buns, split
1/2 cup fresh baby spinach

Steps:

  • In a large skillet, cook onion and garlic in oil over medium heat until tender. Stir in the blueberries, brown sugar, pepper, vinegar, mustard and Worcestershire sauce. Cook and stir until thickened, about 10 minutes. Cool slightly. Transfer to a food processor; cover and process until smooth., Shape turkey into four patties; sprinkle with salt and pepper. Place mushrooms on a double thickness of heavy-duty foil (about 12 in. square). Fold foil around mushrooms and seal tightly. , Grill burgers and mushroom packet, covered, over medium heat for 5-7 minutes on each side or until a thermometer inserted into the burgers reads 165° and juices run clear. Top burgers with cheese; cover and grill 1-2 minutes longer or until cheese is melted., Place buns, cut side down, on grill for 1-2 minutes or until toasted. Serve burgers on buns with mushrooms, spinach and blueberry sauce.

2 teaspoon(s) fresh lime juice
1/2 teaspoon(s) dry mustard
Pork:
2 (1 pound each) pork tenderloins
Salt and freshly ground pepper

Steps:

  • Directions To make sauce: Combine ingredients in a medium saucepan. Bring to a boil over medium heat; reduce heat and simmer until thickened, about 45 minutes. Divide sauce between 2 bowls. Set aside. To make meat: Preheat grill to medium. Season pork with salt and pepper. Sear, turning to cook all sides, 10 to 15 minutes. Brush with half the barbecue sauce, turning frequently, until pork is thoroughly glazed, about 10 minutes more (a meat thermometer should read about 150 degrees). Set aside and let rest 5 minutes.
