TWO-BERRY FLUFF SALAD
This fluffy salad is a welcome treat on warm Texas afternoons. Because there's a blueberry orchard near our home, we often pick up berries to use in this recipe and others. When blueberries and strawberries aren't in season, you can substitute frozen berries with equally good results. -Karen Wenzel, Conroe, Texas

Steps:
- Wash the strawberries very well and trim to remove any green leaves.
- Slice the strawberries in halves and add it to the salad bowl.
- Also add the blueberries to the salad bowl.
- In a separate bowl, mix well the lemon juice and honey mixture.
- Add the lemon honey mixture to the strawberries and blueberries in the bowl, mix well to combine (you may also use other sweeteners instead of honey if you wish).
- Slice the banana in rounds and add it to the salad bowl evenly across the blueberries and strawberries which will pop the red, blue and white colors perfectly well.
- If you mix the bananas too much, they may turn mushy, so the bananas just need to be added on top.
- Just squeeze a little lemon juice on top over the banana slices, so the bananas won't brown quickly.
- If you wish, you can gently mix the bananas in, but the color from strawberries and blueberries may change the color of bananas slightly when you mix, so I usually do not mix them in.
- Place the prepared salad in refrigerate, serve chilled for best results!

Tips for Making a Refreshing Blueberry Banana Salad:
- Choose Ripe Fruit: Use ripe blueberries and bananas to ensure a sweet and flavorful salad. Overripe bananas will add a creamier texture.
- Cut Evenly: Cut the fruit into uniform pieces to ensure even distribution and a balanced taste in each bite.
- Mix Gently: Combine the fruit mixture delicately to avoid bruising the berries and bananas. A light touch preserves their shape and texture.
- Chill Before Serving: Refrigerate the salad for at least 30 minutes before serving to enhance its flavors and make it a refreshing treat.
- Add Toppings: Experiment with various toppings like chopped nuts, granola, or crumbled cookies for added texture and flavor.
- Serve with Dressing or Yogurt: Consider drizzling a citrus dressing, honey, or yogurt over the salad for an extra burst of flavor and moisture.
- Make it a Meal: Add a protein element like grilled chicken or tofu to transform the salad into a light and nutritious meal.
