- Beat eggs, and stir in raisins and vanilla. Refrigerate for at least an hour.
- Preheat oven to 350 degrees F (175 degrees C).
- Cream together shortening, brown sugar, and white sugar until light and fluffy. Combine flour, baking soda, salt, and cinnamon; stir into the sugar mixture. Mix in raisins and eggs, then stir in oats and walnuts. Roll dough into walnut sized balls, and place 2 inches apart on ungreased cookie sheets.

- Using a hand mixer or a stand mixer fitted with paddle attachment, cream the softened butter and both sugars together on medium speed until smooth, about 2 minutes. Add the eggs and mix on high until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed. Add the vanilla and molasses and mix on high until combined. Set aside.
- In a separate bowl, whisk the flour, baking soda, cinnamon, and salt together. Add to the wet ingredients and mix on low until combined. Beat in the oats, raisins, and walnuts (if using) on low speed. Dough will be thick, yet very sticky. Chill the dough for 30-60 minutes in the refrigerator (do the full hour if you're afraid of the cookies spreading too much). If chilling for longer (up to 2 days), allow to sit at room temperature for at least 30 minutes before rolling and baking.
- Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
- Roll balls of dough (about 2 tablespoons of dough per cookie) and place 2 inches apart on the baking sheets. I recommend using a cookie scoop since the dough can be sticky. Bake for 12-14 minutes until lightly browned on the sides. The centers will look very soft and under-baked. Remove from the oven and let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. The cookies will continue to "set" on the baking sheet during this time.

- 1. Prepare the Recipe in a Jar: In the bottom of a wide mouth quart canning jar place oatmeal and flour
- 2. In a bowl mix sugars, powdered egg, baking soda, baking powder, salt and powdered vanilla. Stir ingredients and place in a small sandwich baggie (use a baggie without a ziplock closure). Twist the baggie tight and place baggie of ingredients into the jar.
- 3. Place raisins in a small sandwich baggie. Twist the baggie tight and place baggie of ingredients into the jar.
- 4. Clean the glass rim of the jar. Seal the jar with a FoodSaver or use an Oxygen Absorber to remove the oxygen from the jar. Place the metal lid on the jar and the metal band. - 5. To make the cookies: Open the jar and remove baggies. Discard the oxygen absorber. Place the baggie of the sugar mixture in a mixing bowl and add 1/2 cup shortening and 1/4 cup water. Mix until creamy. Add the flour/oatmeal ingredients and the baggie of raisins and mix. Note: If the raisins start to get a little bit hard soak them in 1/2 cup of hot water for 5-10 minutes. Drain the water off the raisins before adding them to the cookie

- 1. Preheat oven to 350 degrees F.
- 2. In mixing bowl place vanilla, eggs, banana, sugar and butter, cream together on low speed (mixture will look a little curdled). Turn off mixer and add flour, baking soda, cinnamon, salt, raisins and oats. Slowly turn on mixer, keeping on a low speed, until all flour has disappeared in to the batter. Make sure not to over mix the cookies.
- 3. Place batter in freezer for 15 minutes. After 15 minutes using an ice cream scoop, you insert batter onto cookie sheets and bake for 8-12 minutes or until golden are golden brown. I make my cookies medium or large size.
- 4. For GLAZE: In a small microwave safe bowl microwave 2 tablespoons butter and syrup for 1 minute or until butter is melted. Add 1 cup powder sugar and whisk in to syrup butter until sugar is completely dissolved. Pour 1-2 tbsp of glaze over each cookie or just add in the middle of the cookie.
